How Ripe Should The Bananas Be?
You want the bananas to be very ripe. They add both sweetness and moisture to the bread and very ripe bananas have more of both. The bananas should have a lot of black spots on them.
Use the Toothpick Test
Often, banana bread looks done but is still gooey in the middle. To tell if it is done, insert a toothpick in the center. If it comes our clean or with only a few crumbs attached, it is done. If it comes out wet, the bread needs to cook longer.
Storage
It’s moist enough to keep for 3 days or so wrapped well. I think it tastes better though if you cut a slice and warm it in the microwave for a few seconds. Banana Bread also freezes well. Wrap it well in plastic wrap and then place in a freezer bag and freeze for up to 3 months.

Butterscotch Banana Bread
This Butterscotch Banana Bread is one of the most delicious banana breads. It’s loaded with butterscotch morsels and the flavor of butterscotch really complements the banana flavor well.

Ingredients
- 3 medium very ripe bananas (mashed)
- 1 large egg
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 3/4 cup packed brown sugar
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 cup butterscotch chips
Instructions

Preheat oven to 350 degrees and spray a 9X5-inch loaf pan with baking spray with flour.

Place bananas, egg, oil, brown sugar, and vanilla in a large bowl. Use an electric mixer and mix until blended.

In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

Add flour mixture to banana mixture and stir just until combined.

Stir in butterscotch chips. Transfer batter to prepared pan. Bake for 45 to 50 minutes.
Notes
Use very ripe bananas. They should have lots of black spots. Be sure to use fresh baking powder and baking soda. Both are good for 6 to 12 months once opened. You can use half butterscotch chips/ half chocolate chips to change up the flavor. Add half a cup of chopped nuts for some crunch.
