Make the batter the night before and it only takes minutes to make a delicious waffle breakfast that tastes as good as your favorite diner waffles.

How To Serve

I like to top these waffles with butter and maple syrup. Fresh berries are also delicious as is apple butter. To really make them decadent, top them with a little whipped cream. Heavenly!

The yeast not only flavors the waffles, it gives them a little chewiness and really enhances the texture.

These Overnight Yeast Waffles are perfect for when you have overnight guests. There’s hardly any work to do in the morning and you can have hot waffles on the table in just minutes.

There’s only a teaspoon of sugar in the batter so you’ll want to give these waffles a heavy dousing with maple syrup.

Recipe Tip

Be sure the water and milk aren’t too hot. Any hotter than 115 degrees is likely to kill the yeast.

Ingredients

  • 1 (1/4-ounce) package active dry yeast
  • ½ cup warm water (110 to 115 degrees)
  • 1 teaspoon sugar
  • 2 cups warm whole milk (110 to 115 degrees)
  • ½ cup butter (melted)
  • 2 large eggs (lightly beaten)
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon baking soda

Instructions

    Place yeast in a large bowl. Add water and sugar and stir to combine. Let sit for 5 minutes.

    Add the milk, butter, and eggs. Mix well.

    Add the flour and salt and stir until mixed. Cover with plastic wrap and refrigerate overnight.

    Stir the batter. Add baking soda and stir well.

    Cook waffles according to waffle maker's instructions.

Notes

The number of waffles you get from this recipe is dependent on the size and style of your waffle makes. I get about 6 large waffles. Make sure your water and milk are not hotter than 115 degrees or you will kill the yeast.
