This fuss-free microwave recipe works every time and it tastes just like old-fashioned peanut brittle.

Easy Microwave Peanut Brittle

Microwaves vary so it might take a couple of times to get the timing just right. But once you know the perfect time for your microwave, you are set.

Not only is no candy thermometer needed, it is ready to pour on the cookie sheet in less than 10 minutes. Then you just need to wait for it to cool before you break it into those fabulously crunchy pieces.

Make It Spicy

You can try adding just a pinch of cayenne to the mixture before you spread it in the cookie sheet if you want a little heat in your Microwave Peanut Brittle.

How To Store

Store in an airtight container at room temperature for up to a month. Be sure to keep in a cool, dry place.

Microwave Peanut Brittle

Ingredients

  • 1 cup sugar
  • 1/2 cup light corn syrup
  • 1 cup salted peanuts
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking soda

Instructions

    Line a large cookie sheet with parchment paper.

    Add sugar and corn syrup to a medium glass microwave-safe bowl. Stir together.

    Microwave for 3 1/2 minutes at 100% power.

    Stir in peanuts and microwave for 3 minutes.

  5. 5

    Stir in butter and vanilla and microwave 1 minute.

  6. 6

    Stir in baking soda and quickly pour out onto prepared cookie sheet.

    Tilt cookie sheet to get mixture to spread out. Note: It helps if the cookie sheet is warm. You can place it in a warm oven while you are microwaving the brittle.

    Let cool and then break into pieces.
