Salmon Pot Pie Recipe
Ingredients
- 1/3 cup butter
- 1/2 cup chopped yellow onion
- 1/3 cup all-purpose flour
- 1 3/4 cups milk
- 1 teaspoon salt (or to taste)
- 1 1/2 cups frozen mixed vegetables, thawed (carrots, peas, and green beans work wonderfully)
- 1 cup diced potato (russet, Yukon Gold, or red), cooked until tender in simmering water
- 3 (2.5-ounce) pouches Chicken of the Sea® Lemon Pepper Salmon
- 1 refrigerated pie crust
- 1 egg white (for an extra golden crust)
Instructions
- Preheat your oven to 425°F (220°C). Lightly grease a 9-inch deep dish pie plate. This prevents sticking and ensures a nice crust.
- In a medium saucepan, melt the butter over medium heat.
- Add the chopped yellow onion to the melted butter and cook until softened and translucent, about 3-5 minutes. Be careful not to brown them too much.
- Sprinkle the flour over the softened onions. Stir continuously for 1 minute to cook out the raw flour taste, creating a roux.
- Gradually whisk in the milk, pouring it in slowly to avoid lumps. Bring the mixture to a gentle simmer, whisking frequently, and cook until the sauce has thickened to a creamy consistency.
- Remove the pan from the heat. Stir in the salt, thawed mixed vegetables, pre-cooked diced potato, and the flaked Chicken of the Sea® Lemon Pepper Salmon. Ensure all ingredients are well combined.
- Pour the warm filling into the prepared pie plate.
- Carefully unroll the refrigerated pie crust and place it over the filling. Trim any excess dough from the edges, leaving about a 1/2-inch overhang. Use your fingers to crimp the edges firmly, sealing the top crust to the pie plate. This helps prevent the filling from bubbling out.
- In a small bowl, lightly beat the egg white. Brush the egg white over the top of the pie crust. This will give your pie a beautiful golden shine.
- Cut 3 small slits in the center of the pie crust with a sharp knife. These vents will allow steam to escape during baking, preventing a soggy crust and ensuring even cooking.
- Place the pie plate on a baking sheet (to catch any potential drips) and bake for 30 minutes, or until the pie crust is perfectly golden brown and the filling is bubbly.
- Once baked, remove from the oven and let it cool slightly for about 10-15 minutes before slicing and serving. This allows the filling to set, making for cleaner slices.
