Ingredients

Batter

  • 4 ounces unsweetened chocolate, finely chopped
  • 1/3 cup plus 3 tablespoons boiling water
  • 2 cups cake flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 14 tablespoons salted butter, softened
  • 2 tablespoons shortening
  • 1 2/3 cup plus 2 tablespoons superfine sugar
  • 4 large eggs
  • 2 1/2 teaspoons vanilla extract
  • 3/4 cup buttermilk

Midnight Chocolate Frosting

  • 7 cups confectioners’ sugar, sifted
  • 1/8 teaspoon salt
  • 6 ounces unsweetened chocolate, melted and cooled to tepid
  • 12 tablespoons salted butter, melted and cooled to tepid
  • 2 1/2 teaspoons vanilla extract
  • 2 tablespoons heavy cream
  • 1/2 cup plus 1 tablespoon milk

Instructions

  • Preheat oven to 350 degrees F (175 C) and spray a 9×13-inch baking pan with baking spray with flour.
  • Place the finely chopped unsweetened chocolate in a medium bowl. Carefully pour the boiling water over it. Let the mixture stand for a few minutes until the chocolate is completely melted, stirring gently a few times to ensure smoothness. Allow the melted chocolate to cool to tepid temperature before proceeding.
  • Sift together the cake flour, baking soda, and salt onto a piece of waxed paper or into a separate bowl. Sifting ensures no lumps and a lighter cake texture.
  • Using an electric stand mixer fitted with the paddle attachment, beat the softened butter and shortening on medium speed for approximately 3 minutes until light and fluffy.
  • Gradually add the superfine sugar in three equal additions, beating for 1 minute after each addition. This allows the sugar to fully incorporate and contribute to the cake’s fine crumb.
  • Beat in the large eggs one at a time, ensuring each egg is fully incorporated before adding the next. Beat for 45 seconds after each addition. Remember to scrape down the sides of the bowl several times during this process to ensure all ingredients are well combined.
  • Slowly beat in the cooled melted chocolate mixture and vanilla extract until just combined.
  • On low speed, add the sifted flour mixture in 3 additions, alternating with the buttermilk in 2 additions. Begin and end with the flour mixture. Continue to scrape down the sides of the bowl several times to maintain a smooth, uniform batter. Mix until just combined; do not overmix.
  • Transfer the prepared batter evenly into the prepped 9×13-inch baking dish, smoothing out the top with a spatula. Bake for 35 to 40 minutes, or until a wooden toothpick inserted into the center of the cake comes out clean, indicating it’s fully cooked.
  • Once baked, remove the cake from the oven and place it on a wire rack. Allow the cake to cool completely in the pan before attempting to frost it. This prevents the frosting from melting.
