Slow Cooker Smothered Pork Chops: A Southern Classic Made Effortless

While some slow cooker recipes promise a “dump and go” experience, this isn’t one of them. However, don’t let that deter you! Our Slow Cooker Smothered Pork Chops recipe is a labor of love that delivers unparalleled flavor and tenderness, making every extra minute of effort truly worthwhile. The initial steps, including a crucial sear and the creation of a homemade roux, transform simple ingredients into a dish that’s rich, complex, and utterly unforgettable. The result? Pork chops that are so incredibly tender they literally fall off the bone, swimming in a gravy that boasts an extraordinary depth of flavor.

This recipe prides itself on being completely from scratch, eschewing convenience products like canned soups or dry onion soup mixes. We believe that authentic Southern comfort food is built on fresh ingredients and traditional techniques, and this dish is a testament to that philosophy. Each element is carefully chosen and prepared to build layers of flavor, resulting in a gravy that is robust and genuinely homemade.

The slow cooker plays a pivotal role in achieving the signature tenderness of these smothered pork chops. By cooking low and slow for several hours, the collagen in the pork breaks down, rendering the meat incredibly succulent and moist. This extended cooking time also allows the flavors from the onions, spices, and homemade gravy to meld together beautifully, creating a harmonious and deeply satisfying meal that’s perfect for a cozy evening at home.

The Secret to Truly Flavorful Smothered Pork Chops

The cornerstone of any outstanding smothered pork chop recipe lies in its seasoning. You might be tempted to dial back on the spices, but trust us when we say that generous seasoning is the key to unlocking the full potential of this dish. Slow-cooked meats can sometimes lose their vibrancy, but our carefully balanced blend ensures every bite is bursting with taste.

Our powerful seasoning blend features a symphony of flavors: Lawry’s seasoned salt provides a savory foundation, while paprika adds a sweet, peppery warmth and a beautiful color. Onion powder and garlic powder deliver aromatic depth, enhancing the natural sweetness of the caramelized onions. A touch of black pepper adds a subtle kick, and cayenne pepper introduces a gentle heat that awakens the palate without overwhelming it. This robust combination doesn’t just season the pork chops; it infuses the entire gravy, ensuring a rich, complex flavor profile that will have everyone asking for seconds. The ample amount of gravy in this recipe means that every spoonful will carry the full weight of these magnificent spices.

Choosing the Best Pork Chops for Smothering

For this particular recipe, we highly recommend using bone-in pork chops. The bone acts as a natural insulator, helping the pork to cook more evenly, retaining moisture, and contributing significantly to the overall flavor of the dish. As the chops slowly simmer, the bone marrow releases savory compounds into the gravy, enriching it further. Blade-cut pork chops, typically 3/4 to 1-inch thick, are ideal as they have a good amount of marbling which ensures they remain juicy and tender after hours in the slow cooker. If blade-cut aren’t available, other bone-in cuts like shoulder chops or even thick-cut loin chops can work, though the cooking time might vary slightly.

If you absolutely must use boneless pork chops, choose thicker cuts to prevent them from drying out. However, be mindful that they may cook faster and might not offer the same depth of flavor. In such cases, consider adding a tablespoon of chicken or beef bouillon to the gravy mixture to compensate for some of the flavor lost from the bone.

The Importance of a Perfect Roux for Rich Gravy

One of the distinguishing features of this smothered pork chop recipe is its incredibly rich and thick gravy, achieved through a homemade roux. A roux, a mixture of fat and flour cooked together, serves as the foundation for countless classic sauces and gravies. For this recipe, we cook the roux until it reaches a beautiful peanut butter color, which not only thickens the gravy but also imparts a deep, nutty flavor that cannot be replicated by simply stirring in flour at the end.

Making a roux takes a little patience, requiring constant whisking over medium heat to prevent burning. However, this small investment of time yields huge dividends in taste and texture. The dark roux adds a depth of color and a subtle toasty flavor that complements the savory pork and onions perfectly. This is what truly elevates the gravy from good to extraordinary, ensuring it clings beautifully to the pork chops and any accompanying sides.

Slow Cooker Smothered Pork Chops with abundant onions and an intensely flavored gravy create a truly delicious Southern meal. You’ll want to serve these tender pork chops over white rice or creamy mashed potatoes to savor every drop of the rich gravy.

Equipment

  • 6-quart slow cooker

Ingredients

  • 1 tablespoon Lawry’s seasoned salt
  • 2 teaspoons paprika
  • 1 1/2 teaspoons onion powder
  • 1 1/2 teaspoons black pepper
  • 1 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 6 bone-in blade cut pork chops, 3/4 to 1-inch thick
  • 1/2 cup vegetable oil, divided
  • 3 cups thinly sliced onions
  • 1/2 cup all-purpose flour
  • 2 1/4 cups water
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon cider vinegar
  • 1 tablespoon cornstarch, optional
  • Sliced green onion, optional (for garnish)

Instructions

  1. Combine Lawry’s seasoned salt, paprika, onion powder, black pepper, garlic powder, and cayenne pepper in a small bowl. This is your flavorful spice blend.
  2. Pat the pork chops thoroughly dry with paper towels. This helps achieve a better sear. Sprinkle them generously all over with approximately 2 tablespoons of the prepared spice mixture. Place the seasoned pork chops into a 6-quart or larger slow cooker.
  3. Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the thinly sliced onions and cook for about 5 minutes, stirring occasionally, until they soften and begin to caramelize slightly. Transfer the softened onions on top of the pork chops in the slow cooker.
  4. To the now empty skillet, add the remaining 6 tablespoons of vegetable oil. Once shimmering, add the all-purpose flour and whisk it in continuously. Cook over medium heat, whisking constantly, for about 5 minutes until the mixture turns a rich, peanut butter color. This is your roux, the base for the thick, flavorful gravy.
  5. Once the roux has reached the desired color, stir in the remaining spice mixture. Whisk for about 10 seconds to toast the spices and release their aroma.
  6. Gradually whisk in the water, adding it slowly to prevent lumps. Continue to whisk until the gravy is smooth and thickens to a boil. Stir in the Worcestershire sauce. Carefully pour this rich gravy mixture over the pork chops and onions in the slow cooker, ensuring everything is well-covered.
  7. Cover the slow cooker and cook on the LOW setting for 5 hours. This low and slow cooking process ensures the pork chops become incredibly tender and the flavors meld beautifully.
  8. After 5 hours, carefully remove the tender pork chops to a serving platter. They will be very delicate and may fall apart easily, so use tongs or a slotted spoon.
  9. Spoon off any excess oil that has risen to the top of the liquid in the slow cooker. Stir in the cider vinegar. Taste the gravy and adjust seasoning with more salt and pepper if desired. If you prefer a thicker gravy, mix 1 tablespoon of cornstarch with an equal part of cold water to create a slurry. Stir this slurry into the gravy in the slow cooker. Cover and cook on HIGH for an additional 10 to 15 minutes, or until thickened.
Note: Alternatively, you can transfer the gravy to a saucepan, stir in the cornstarch/water mixture, and bring it to a boil on the stovetop. This method is quicker but will mean an extra pot to clean.
