A fabulously rich and creamy Broccoli Cheddar Soup made with a delectable blend of 3 types of cheese. This recipe can also be easily adapted to be vegetarian.

  • 1 medium onion, diced
  • 2 carrots, peeled and thinly sliced
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth, or vegetable broth
  • 2 cups half-and-half
  • 8 cups chopped broccoli, small bite-sized pieces
  • 1 (8-ounce) block Fontina cheese, shredded
  • 1 (8-ounce) block white Cheddar cheese, shredded
  • 4 ounces cream cheese, room temperature
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes

Instructions

  1. In a Dutch oven, melt butter over medium heat. Add onion and carrots and cook until soft, about 5 minutes.
  2. Sprinkle flour over the onion/carrot mixture. Cook and stir for 2 minutes to create a roux.
