The Magic of Ritz Crackers: Achieving Unbeatable Crispness

Crushed Ritz crackers are an absolute game-changer when it comes to creating an unforgettable coating for chicken or even casseroles. There’s a reason they’re a top choice for discerning home cooks seeking that perfect crunch. Their signature buttery flavor cooks up beautifully, forming a crispy, golden crust that adds an unparalleled richness to the chicken. What’s more, Ritz crackers come pre-seasoned with just the right amount of salt, minimizing the need for additional seasoning in your breading mixture. This simple yet effective ingredient elevates ordinary chicken breasts into a gourmet-tasting dish with minimal effort.

Crafting the Perfect Crispy & Tender Chicken

The journey to these delightful Cheesy Chicken Breasts begins with a meticulously prepared coating. We start by gently seasoning the boneless, skinless chicken breasts with salt and pepper to ensure flavor permeates every fiber. Then, a simple egg wash acts as the perfect adhesive for our special breading. The real magic happens when the chicken is dredged through a flavorful mixture of finely crushed Ritz crackers, all-purpose flour, a hint of smoky paprika, and a generous touch of grated Parmesan cheese. This combination not only provides a phenomenal texture but also infuses the chicken with layers of savory taste.

Once expertly coated, the chicken breasts are pan-fried in a skillet with a touch of butter over medium heat. This initial searing step is crucial, as it locks in moisture and creates that irresistible golden-brown crispness on both sides. After achieving that beautiful exterior, the chicken is transferred to the oven to finish cooking through, ensuring it remains incredibly juicy and tender on the inside. This dual cooking method guarantees a perfect texture balance – crispy on the outside, moist on the inside – every single time.

The Irresistible Cheddar Cheese Sauce

No “Cheesy Chicken Breasts” dish would be complete without a truly exceptional cheese sauce, and this recipe delivers just that. Our sauce is a luscious, thick, and wonderfully creamy concoction, boasting an intense cheese flavor derived from a generous cup of shredded sharp cheddar cheese. The sharpness of the cheddar cuts through the richness of the chicken, creating a balanced and utterly addictive experience. Made with a classic roux, this sauce comes together effortlessly, transforming into a silky blanket that elevates the entire dish from good to extraordinary. Its smooth consistency and robust flavor make it an absolute highlight, promising to have everyone reaching for seconds.

Serving Suggestions and Culinary Variations

While the Cheesy Chicken Breasts are undoubtedly the star, thoughtful side dishes can truly complete the meal. For a classic and comforting pairing, serve these delightful chicken breasts alongside fluffy white rice, allowing the creamy cheese sauce to meld perfectly with the grains. A vibrant garden salad provides a refreshing counterpoint, adding a crisp texture and light, tangy notes to balance the richness of the main course. Beyond these staples, consider serving with steamed green beans, roasted asparagus, or even creamy mashed potatoes for an extra layer of indulgence. For those who enjoy a bit of heat, a dash of hot sauce in the cheese sauce or a sprinkle of red pepper flakes over the chicken can add an exciting kick. Experiment with different types of cheese in the sauce – Gruyère or Monterey Jack could offer interesting variations, or blend them for a complex flavor profile. This dish is versatile, inviting you to customize it to your family’s preferences.

Boneless chicken breasts coated in a Ritz cracker crumb coating, pan-fried until crispy, and served with a cheddar cheese sauce.

Ingredients

  • 4 boneless, skinless chicken breasts
  • salt and pepper
  • 2 egg yolks
  • 2 tablespoons water
  • 1 sleeve Ritz crackers,, about 30 crackers
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon paprika
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons butter

Cheese Sauce

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 1 teaspoon Worcestershire sauce
  • 1 cup shredded cheddar cheese
  • Parsley for garnish,, optional

Instructions

  • Preheat oven to 350 degrees Fahrenheit (175°C) and lightly grease a baking dish suitable for your chicken breasts.
  • Season both sides of the boneless, skinless chicken breasts generously with salt and freshly ground black pepper.
  • In a shallow bowl, whisk together the egg yolks and water until well combined. This will act as the binder for your coating.
  • Using a food processor, pulse the Ritz crackers until fine, uniform crumbs are formed. Be careful not to over-process into a paste.
  • In a separate pie plate or shallow dish, combine the crushed cracker crumbs, 1/3 cup all-purpose flour, paprika, and grated Parmesan cheese. Mix thoroughly.
  • Take each seasoned chicken breast, dip it into the egg mixture, allowing any excess to drip off. Then, dredge it thoroughly in the cracker crumb mixture, pressing gently to ensure an even and firm coating.
  • Melt 2 tablespoons of butter over medium heat in a large nonstick pan or cast-iron skillet. Once the butter is shimmering, carefully add the coated chicken breasts. Increase the heat slightly to medium-high and cook for about 2 minutes per side, or until beautifully golden brown and crispy.
  • Transfer the pan-fried chicken breasts to the prepared baking dish. Bake in the preheated oven for approximately 25 minutes, or until the internal temperature of the chicken reaches 165 degrees Fahrenheit (74°C) and it is cooked through.
  • Meanwhile, prepare the cheese sauce. In a medium saucepan, melt 2 tablespoons of butter over medium heat. Stir in 2 tablespoons of all-purpose flour and cook for about 30 seconds, creating a roux. Gradually whisk in 1 cup of milk, ensuring no lumps form. Continue to whisk and cook until the sauce gently simmers and thickens to your desired consistency.
  • Remove the saucepan from the heat and whisk in the Worcestershire sauce and 1 cup of shredded cheddar cheese until the cheese is completely melted and the sauce is smooth and creamy.
  • Serve the crispy, oven-baked chicken breasts immediately, generously topped with the warm, rich cheddar cheese sauce. Garnish with fresh parsley if desired.
