  • 7 cups broccoli florets
  • 6 slices bacon
  • ½ medium onion, diced
  • 1 cup sliced mushrooms
  • 1 (10-ounce) can condensed cream of chicken soup
  • ½ cup mayonnaise
  • ½ cup sour cream
  • 2 large eggs, lightly beaten
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 ½ cups shredded sharp cheddar cheese
  • 30 Ritz crackers
  • 2 tablespoons melted butter.

Instructions

  2. Add about an inch of water to a large pot. Set a steamer basket in the pot and bring water to a boil. Add broccoli and place lid on pot. Steam until crisp tender, about 5 minutes. Cool.
  3. Cook bacon in a nonstick skillet until crispy. Remove and set aside. Discard all but 2 tablespoons of bacon grease. Cook the onion and mushrooms in the remaining bacon grease until the mushrooms are golden and the onion is softened, about 5-7 minutes. Cool.
  4. In a large bowl, whisk together cream of chicken soup, mayonnaise, sour cream, eggs, garlic powder, salt, and pepper until smooth.
  5. Stir the cooled broccoli, onions, and mushrooms into the soup mixture. Crumble the cooked bacon and add half of it, along with 1 cup of shredded cheddar cheese, to the bowl and mix well to combine.
  6. Transfer the mixture to a greased 2½ to 3-quart baking dish. Sprinkle the remaining cheese and bacon on top.
