  • 9×13-inch baking dish

Ingredients

  • 6 slices rye or pumpernickel bread, cut into cubes
  • 1 pound deli-sliced corned beef, cut into strips
  • 1 (16-ounce) can sauerkraut, drained well
  • 1/2 cup Thousand Island dressing, plus more for serving
  • 1 cup shredded swiss cheese
  • 1 cup shredded mozzarella cheese

Instructions

  • Preheat oven to 375 degrees F (190 degrees C) and lightly spray a 9×13-inch baking dish with cooking spray to prevent sticking.
  • Set aside about 1/3 of the rye or pumpernickel bread cubes. Place the remaining bread cubes evenly across the bottom of the prepared baking dish, forming the base layer of the casserole.
