Sloppy Joe Cornbread Muffins

Cornbread muffins stuffed with a savory sloppy joe mixture and topped with gooey cheese make a fantastic snack, a satisfying lunch, or a fun, easy dinner option for the whole family.

Ingredients

  • 1 pound lean ground beef
  • 1/2 medium onion, chopped
  • 1/3 cup chopped green bell pepper
  • 2/3 cup ketchup
  • 1 1/2 teaspoons Worcestershire sauce
  • 1 teaspoon ground mustard
  • 1/2 teaspoon garlic powder
  • 1/8 teaspoon cayenne pepper
  • 2 (6-ounce) packets Martha White® Buttermilk Cornbread Mix
  • 1 1/3 cups milk
  • 1 cup shredded cheddar cheese
  • Optional for serving: sour cream and sliced green onion

Instructions

  1. Brown ground beef with onion and green pepper in a large nonstick pan over medium heat. Drain any excess fat.
  2. Stir in ketchup, Worcestershire sauce, ground mustard, garlic powder, and cayenne pepper. Bring to a simmer and cook for 2 to 3 minutes, allowing the flavors to meld. Remove the sloppy joe mixture from heat.
  3. Preheat your oven to 400 degrees Fahrenheit (200°C). Lightly grease a 12-cup standard muffin tin.
  4. In a medium bowl, combine the Martha White® Buttermilk Cornbread Mix with milk. Stir until just combined; be careful not to overmix.
  5. Fill each prepared muffin cup halfway with the cornbread batter.
  6. Drop 1 heaping tablespoon of the sloppy joe mixture into the center of each muffin cup. You will have some extra sloppy joe mixture remaining – save it for step 7!
  7. Place the muffin tin in the preheated oven and bake for approximately 15 minutes, or until the edges of the cornbread are light golden brown and set.
  8. Carefully remove the muffins from the oven. Spoon another tablespoon of the remaining sloppy joe mixture on top of each muffin, followed by a sprinkle of shredded cheddar cheese.
  9. Return the muffins to the oven for another 2-3 minutes, or until the cheese is beautifully melted and bubbly.
  10. Serve warm, garnished with a dollop of sour cream and a sprinkle of chopped green onion, if desired. Enjoy!
