Pumpkin-Ancho Enchiladas with Pulled Pork

These Enchiladas are filled with a pulled pork and corn mixture and covered in a pumpkin-ancho sauce. If you’re a fan of spicy food, they are sure to become a favorite.

Ingredients

  • 2 dried ancho chili peppers
  • 1 can Libby’s pumpkin puree (15 oz)
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • ¼ teaspoon red pepper flakes, or more to taste for extra heat
  • 2 cups pulled pork, cooked and shredded, or substitute with shredded chicken
  • 1 cup corn, fresh, frozen (thawed), or canned (drained)
  • ¼ cup sour cream
  • 1 cup shredded Colby Jack cheese, divided
  • 8 corn tortillas
  • Fresh chopped cilantro, for garnish
  • Queso fresco or Cotija cheese, crumbled, optional (feta cheese also works as a substitute)

Instructions

  1. Begin by carefully removing the stems from the two dried ancho chili peppers. Gently peel them open and make sure to discard all the seeds. Place the prepared peppers in a heatproof bowl and cover them with approximately 2 cups of freshly boiled water, ensuring they are fully submerged. Allow the peppers to rehydrate for a full 30 minutes until they are soft and pliable.
  2. While the ancho peppers are rehydrating, preheat your oven to 350°F (175°C). This will allow the oven to reach the correct temperature by the time your enchiladas are ready for baking.
  3. Once the peppers are softened, carefully transfer them and 1 ½ cups of their soaking liquid to a blender. Add the entire can of Libby’s pumpkin puree, the minced garlic cloves, ground cumin, sugar, salt, and red pepper flakes. Blend the mixture thoroughly until it is completely smooth and uniform in consistency. Taste and adjust seasoning if necessary.
