  • 1/3 cup shredded Parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • 4 boneless skinless chicken breasts
  • salt and pepper, to taste
  • 1/2 teaspoon paprika
  • wooden toothpicks
  • 1 tablespoon olive oil
  • 1 tablespoon oil from sun-dried tomato jar

Instructions

  • In a medium bowl, thoroughly stir together the softened cream cheese, defrosted spinach, sliced sun-dried tomatoes, garlic powder, mozzarella cheese, Parmesan cheese, and Italian seasoning until all ingredients are evenly mixed. Set this creamy filling aside.
  • Carefully cut a deep pocket into the side of each boneless, skinless chicken breast. Ensure the pocket is large enough to hold the filling without cutting all the way through. Season both the outside of the chicken breasts and inside each pocket generously with salt and pepper.
