My recent visit to Mexico sparked an incredible inspiration. There, amidst the lively culture and breathtaking scenery, the simple yet profound pleasure of a perfectly crafted fish taco, often accompanied by a refreshing Margarita and creamy guacamole, became a highlight of my culinary explorations. It was a taste experience that lingered, prompting me to recreate that magic with a distinctly Southern twist.
An Unforgettable Voyage: Exploring Mexico’s Charms with a Princess Cruise

Last September, I embarked on a momentous journey: my very first cruise. A Princess Cruise sailing off the picturesque coast of California, this voyage was specially themed around food and wine. Our initial excursion took us through the scenic Santa Barbara wine country, a truly enchanting start. The following day brought an even greater thrill: our arrival in Ensenada, Mexico. Having never set foot in Mexico before, the anticipation and excitement were immense.
Discovering Baja’s Hidden Gem: Monte Xanic Winery

Our Mexican adventure led us to the esteemed Monte Xanic Winery, nestled in the heart of Baja’s burgeoning wine region. The very idea of wineries in Mexico had not even crossed my mind until this trip, so I arrived with absolutely no preconceptions. What awaited me was nothing short of extraordinary.

But wow!
I could have easily spent the entire day there, simply soaking in the atmosphere without moving a muscle!


Adding to the excitement, we were joined by none other than Iron Chef Cat Cora (pictured in the middle) and Julie, who famously played the Captain’s daughter on the iconic show, The Love Boat. Their presence added an extra layer of celebrity charm to an already incredible experience.

To say I was blown away would be an understatement! The architectural design of the Monte Xanic winery and its tasting room is simply masterful. It perfectly frames the fabulous, unobstructed views of the valley, creating an immersive experience where human ingenuity and natural beauty coalesce seamlessly.

The modern and minimalist architecture of Monte Xanic makes a powerful statement without ever distracting from the serene natural beauty of the surrounding landscape. The structure itself is thoughtfully integrated with the rugged rock cliff it sits upon, appearing as if it grew organically from the earth. It is, quite simply, stunning, absolutely stunning.

During our visit, we had the pleasure of tasting a selection of their wines, and I found them all to be of exceptional quality. Pictured above, among other esteemed guests, is Suzanne Tracht, the renowned chef and owner of Jar Restaurant in Los Angeles, adding another layer of culinary prestige to our excursion.

These are not merely decorative; they have been recycled from old ships and, being virtually indestructible, serve a practical purpose: protecting the building from the elements. This innovative approach to design, blending sustainability with striking aesthetics, truly showcases the depth of thought that went into creating this breathtaking masterpiece.

Following our delightful wine tasting, we were treated to an insightful tour of the winery itself, delving into the fascinating process of winemaking.

The tour revealed a vast cellar housing an impressive number of wine barrels, each contributing to the rich aging process of Monte Xanic’s exceptional wines.
A Lakeside Feast: Culinary Delights in Ensenada

After the tour, an amazing lunch awaited us by the serene lake in front of the winery. It was a spectacular multi-course meal, featuring one delicious dish after another. The emphasis was heavily on seafood, and I must attest to its incredible freshness, a true testament to Mexico’s coastal bounty.

Among the many culinary highlights, the soup, beautifully pictured on the bottom left, quickly became one of my favorites – a rich and aromatic seafood bouillabaisse, brimming with flavors of the ocean. And, as a true seafood lover, I could never resist the allure of fresh oysters, each one uniquely prepared to showcase its delicate taste. Our main course was a perfectly cooked quail, served with the most incredibly flavorful vegetables, which I suspect were expertly smoked. This lunch was a genuine treat, allowing me to savor so many novel flavors and encounter ingredients I had never tasted before. It was an exploration of taste as rich and rewarding as the landscapes we had witnessed.
Ensenada’s Charms and the Quest for the Perfect Fish Taco

Following our incredible lakeside lunch, we had a precious window of time to explore the charming town of Ensenada before re-boarding the Ruby Princess. Throughout the day, the topic of fish tacos had been a recurring delight in our conversations, and I was resolute: I would not leave Mexico without indulging in an authentic fish taco and a refreshing Margarita. Our quest led us to the inviting establishment pictured in the lower left of the image above. After savoring our tacos and margaritas, we managed to fit in a brief stroll through a couple of blocks of the town, picking up a few delightful trinkets for our daughter. All in all, it was an absolutely fabulous day, allowing us to experience a significant slice of Mexico’s culture and culinary delights in a wonderfully condensed timeframe. Such is the unique beauty and efficiency of a cruise!

After my invigorating visit to Mexico, making fish tacos was an absolute must. However, with my deep roots in the South, I wanted to infuse them with a distinctive regional flair. Catfish, a beloved staple in Southern cuisine, was the natural choice. It fries up beautifully, achieving that perfect crispy exterior and tender, flaky interior that is essential for an exceptional taco. Furthermore, as a true Southerner, I adore a creamy coleslaw gracing almost any dish. To elevate this classic and marry it with the vibrant spirit of my Mexican journey, I decided on a sweet and spicy combination – my absolute favorite flavor profile. The addition of tangy pickled jalapeños and juicy, sweet peaches to the slaw created a truly delicious and unforgettable topping. This is fusion cuisine at its finest, bringing together two distinct worlds on a single, delectable plate.

Southern Catfish Tacos with Jalapeño-Peach Slaw

Ingredients
Jalapeño-Peach Coleslaw
- 2 cups thinly sliced red cabbage
- 2 cups thinly sliced green cabbage
- 1/2 a red onion, thinly sliced
- 2 tablespoons chopped pickled jalapeños
- 1/2 cup diced peaches (fresh or frozen, thawed)
- 1/3 cup mayonnaise
- 1 teaspoon sugar
- 1 tablespoon liquid from pickled jalapeños
Catfish Tacos
- 1 (16-ounce) catfish filet
- Salt and pepper, to taste
- 3/4 cup flour
- 3/4 cup yellow cornmeal
- 1 1/2 teaspoons garlic salt
- 3/4 teaspoon cayenne pepper
- 1/2 cup buttermilk
- 1 egg, lightly beaten
- Vegetable oil, for frying
- 4 small flour or corn tortillas
- Fresh cilantro, chopped (optional, for garnish)
Instructions
- Prepare the Coleslaw: In a medium bowl, combine both red and green cabbages, thinly sliced red onion, chopped pickled jalapeños, and diced peaches.
- In a separate small bowl, whisk together the mayonnaise, sugar, and the liquid from the pickled jalapeños. Pour this dressing over the cabbage mixture and stir well to combine all ingredients. Season to taste with salt and freshly ground black pepper. Refrigerate the slaw until ready to serve, allowing the flavors to meld.
- Prepare the Catfish Coating: In a pie pan or a shallow dish, combine the flour, yellow cornmeal, garlic salt, and cayenne pepper. Mix thoroughly to create an even coating mixture.
- In a medium bowl, whisk together the buttermilk and the lightly beaten egg until well combined.
- Prepare the Catfish: Cut the catfish filet into approximately 1-inch wide strips. Season the strips generously with salt and pepper on all sides.
- Dip each catfish strip first into the buttermilk mixture, ensuring it is fully coated, then dredge it in the cornmeal mixture, pressing gently to adhere the coating evenly.
- Fry the Catfish: Heat about 1 inch of vegetable oil in a cast iron pan or a heavy-bottomed skillet over medium heat. Ensure the oil reaches approximately 350-375°F (175-190°C).
- Carefully place the coated catfish strips into the hot oil in batches, being careful not to overcrowd the pan. Cook for about 2-3 minutes per side, or until golden brown and cooked through. Remove the fried catfish strips and drain them on a plate lined with paper towels to absorb any excess oil.
- Assemble the Tacos: Warm the tortillas until pliable. This can be done quickly in a microwave or by heating them gently in a dry pan over low heat for about 30 seconds per side.
- Place a couple of crispy catfish strips onto each warm tortilla. Top generously with the prepared Jalapeño-Peach Coleslaw. If desired, sprinkle with fresh chopped cilantro for an added burst of freshness. Serve immediately and enjoy!
