How To Make Pina Colada Zucchini Bread

  1. Mix dry ingredients. In a large bowl, whisk together the flour, sugar, baking powder, salt, and baking soda.
  2. Mix wet ingredients. In a separate bowl, whisk the eggs, vegetable oil, vanilla, coconut, and rum extracts.
  3. Combine. Pour the wet ingredients into the dry and stir just until combined. Fold in the shredded zucchini, drained crushed pineapple, shredded coconut, and half of the chopped walnuts.
