This Oven Barbecued Chicken is incredibly moist and flavorful, making it the perfect solution when you crave BBQ but don’t have access to a grill.

Ingredients

  • 4 chicken leg quarters
  • Kosher salt and freshly ground black pepper (to taste)
  • 1 tablespoon vegetable or canola oil
  • 1 cup BBQ sauce (store-bought or homemade Dr. Pepper BBQ sauce recommended)

Instructions

  • Preheat your oven to 375°F (190°C). Lightly season the chicken pieces all over with kosher salt and pepper. Heat the vegetable or canola oil in a large, oven-safe skillet over medium-high heat until shimmering. Carefully place 2 pieces of chicken in the skillet, skin side down, and sear for 2 minutes until the skin is beautifully golden and caramelized.
  • Remove the seared chicken from the pan and arrange them skin side up in a large baking dish. If needed, add a little more oil to the skillet and repeat the searing process with the remaining 2 chicken pieces, cooking them skin side down for 2 minutes until well seared. Transfer these last two pieces to the same baking dish, skin side up.
  • Generously baste all the chicken with your chosen BBQ sauce, ensuring each piece is well coated. Place the baking dish in the preheated oven and bake for 20 minutes.
  • Remove the chicken from the oven, baste again with more BBQ sauce to build up the glaze, and return to the oven for another 15 minutes.
  • Perform a third basting, coating the chicken thoroughly. Bake for a final 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C) when checked with a meat thermometer. The sauce should be caramelized and slightly sticky. Serve hot with any leftover sauce on the side (for safety, bring any reserved sauce to a boil before serving).
