Ingredients

For the Cake:

  • 1 1/2 cups (3 sticks) Challenge unsalted butter, room temperature
  • 2 1/3 cups sugar
  • 3 large egg whites
  • 2 teaspoons vanilla extract
  • 3 cups cake flour
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 1 1/2 cups buttermilk
  • parchment paper

For the Frosting:

  • 1 3/4 cups (3 1/2 sticks) Challenge unsalted butter, softened
  • 1/4 cup juice from jar of maraschino cherries
  • 1/4 teaspoon salt
  • 6 cups powdered sugar
  • 20 maraschino cherries, chopped

Instructions

  1. To make the cake, preheat oven to 350 degrees F (175 C) with one rack positioned one-third from the bottom of the oven and a second rack two-thirds from the bottom. Line three 9-inch cake pans with parchment paper rounds and spray with Baker’s Joy or butter and flour.
  2. In a medium bowl, whisk together the cake flour, baking soda, salt, and baking powder. Set aside.
  3. Using an electric mixer with a paddle attachment, beat the Challenge butter and sugar on medium speed until the mixture is light and fluffy, which should take about 2 minutes.
  4. Scrape down the sides of the bowl, then add the egg whites and vanilla extract. Continue to beat on medium speed for 1 minute until well combined.
  5. Add one-third of the dry flour mixture to the wet ingredients and beat on medium speed until just incorporated, being careful not to overmix.
  6. Pour in half of the buttermilk and beat on medium speed until thoroughly mixed in.
  7. Scrape down the sides of the bowl, then repeat the process, adding another one-third of the flour mixture, followed by the remaining buttermilk, and finishing with the final one-third of the flour. The finished batter should be thick and glossy.
  8. Pour the batter evenly into the three prepared cake pans. Place two cake pans on one oven rack and the third pan on the second rack, staggering them so that they are not directly over each other to ensure even heat circulation.
  9. Bake for 25 to 35 minutes, or until the tops of the cakes are flat and lightly browned, and a wooden skewer inserted into the center comes out clean.
  10. Cool the cakes in their pans for 10 minutes before inverting them onto wire racks to cool completely. (Cakes can be wrapped tightly in plastic wrap and frozen for up to 3 weeks for future use).
  11. For the frosting, in a large bowl with an electric mixer, beat the softened Challenge butter and maraschino cherry juice until smooth and creamy. Add the salt and gradually beat in the powdered sugar, a cup at a time, until the frosting is light and fluffy.
  12. Gently fold in the chopped maraschino cherries until they are evenly distributed throughout the frosting.
  13. Once the cakes are completely cool, spread the frosting generously between the layers, then cover the top and sides of the entire cake with the remaining cherry buttercream.
