Spicy Southern Collard Greens: A Soulful Taste of Tradition
Discover the authentic flavor of the South with these Spicy Collard Greens, slow-cooked to perfection in a rich, bacon-infused broth. Tender, vibrant, and bursting with a harmonious blend of savory, tangy, and spicy notes, this classic dish promises to be a highlight at any meal.

Serving Up Southern Comfort: The Versatility of Collard Greens
Spicy Collard Greens are more than just a side dish; they are a culinary cornerstone of Southern cuisine. Their deep, earthy flavor and tender texture make them an ideal accompaniment to virtually any meat, from succulent roast pork to crispy fried chicken. However, for a truly authentic experience, many Southerners enjoy them as a meal unto themselves, especially when paired with a hearty slice of cornbread. An hour of gentle simmering transforms the collard greens into a beautifully tender, almost silky consistency, yet they retain a satisfying bite and substance that is utterly delightful.
What truly sets these spicy collard greens apart is their incredible depth of flavor. A generous addition of apple cider vinegar introduces a bright, zesty “TWANG” that perfectly balances the richness of the bacon broth. Then, a touch of hot sauce ignites your palate with a pleasant warmth, creating an unforgettable taste sensation. There’s an undeniable complexity in every bite, proving that this dish is anything but bland.
Across the Southern states, green leafy vegetables hold a special place in our hearts and on our tables. Whether it’s the peppery bite of mustard greens, the earthy notes of turnip greens, or the robust character of collard greens, every Southerner has a personal favorite. For many, including myself, collard greens reign supreme. It’s a fitting preference, considering collard greens proudly hold the title of the official state vegetable of my home state, South Carolina.

The Essential Companion: Savoring Collard Greens with Pot Likker
For connoisseurs of Southern greens, there’s an unspoken rule: the best way to enjoy collard greens is always with cornbread. But it’s not just any cornbread; it’s the kind that’s perfect for soaking up the precious liquid known as “pot likker.” This isn’t merely broth; it’s a highly concentrated, intensely flavorful elixir that results from the slow, deliberate cooking of collard greens. The pot likker captures all the savory essence of the bacon, the tang of the vinegar, and the rich earthiness of the greens, creating a unique taste that is truly unparalleled.
Southern grandmothers, revered for their culinary wisdom, often share a beloved saying: “Pot likker will cure what ails you, and if nothing is ailing you, it will give you a good cleaning out.” While perhaps not a medical remedy, there’s certainly a comforting truth to it. This potent, savory broth has a way of soothing the soul and invigorating the spirit. For many, including myself, a bowl of spicy collard greens with its accompanying pot likker is pure fall comfort food, Southern style, and it certainly cures what ails me!
The tradition of pot likker extends beyond mere taste; it embodies a philosophy of no-waste cooking and deep respect for every ingredient. The nutrients from the greens leach into the broth, making it a surprisingly wholesome and flavorful component of the meal. Drenching a piece of warm cornbread in this dark, flavorful liquid is a ritual that has been passed down through generations, connecting us to a rich heritage of Southern cooking.

Spicy Collard Greens Recipe
By Christin Mahrlig
These Spicy Collard Greens are slow cooked in a rich, bacon-flavored broth until incredibly tender, then expertly spiced with red pepper flakes and a touch of hot sauce for that authentic Southern kick.
Ingredients
- 2 pounds collard greens, rinsed and prepared
- 5 slices thick-cut bacon, diced
- 1 large onion, diced
- 3/4 cup chicken broth
- 3 tablespoons cider vinegar
- 1 tablespoon dark brown sugar
- 1 teaspoon red pepper flakes
- 1/4 to 1/2 teaspoon Tabasco sauce or other hot sauce
- Salt and freshly ground black pepper to taste
Instructions
-
To prepare the collard greens, use a sharp knife to carefully cut along either side of the thick central rib that runs up each leaf. Remove and discard this fibrous rib. For smaller, more tender leaves, simply remove the stem. Stack approximately 4 to 5 leaves, roll them tightly into a cylinder, and then slice into 1/2-inch strips. Repeat this process with all remaining collard greens. Thoroughly rinse the chopped greens to remove any grit or dirt.
-
In a large, heavy-bottomed pot or Dutch oven, cook the diced bacon over medium heat until it is deliciously crisp. Using a slotted spoon, carefully remove the cooked bacon bits and transfer them to a plate lined with paper towels to drain. Reserve the rendered bacon fat in the pot.
-
Add the diced onion to the hot bacon fat in the pot. Sauté over medium heat, stirring occasionally, until the onion becomes soft and translucent, typically taking about 5-7 minutes.
-
Pour in the chicken broth, cider vinegar, and add the dark brown sugar, red pepper flakes, and Tabasco sauce to the pot. Stir all the ingredients together thoroughly, scraping up any browned bits from the bottom of the pot to incorporate all the flavors.
-
Add the prepared collard greens to the pot. It might seem like a large volume at first, but they will cook down considerably. Use tongs to turn and mix the greens until they begin to wilt and reduce in size. Once wilted, cover the pot, reduce the heat to low, and let the greens slow cook for at least 1 hour, stirring occasionally to ensure even cooking and prevent sticking. This long, slow cooking process is key to developing their tender texture and deep flavor.
-
Before serving, stir in the crispy bacon bits, reserving some for garnish if desired. Taste the greens and season generously with salt and freshly ground black pepper to your preference. Serve hot, ideally with a side of cornbread to soak up all that delicious pot likker.
