For the Cornbread:
- 1 cup self-rising cornmeal (Martha White recommended)
- 1/2 cup self-rising flour (White Lily recommended)
- 3/4 cup buttermilk
- 2 large eggs
- 2 tablespoons Vegetable oil
For the Dressing:
- 8 tablespoons butter (1 stick)
- 3 medium onions, chopped
- 4 stalks celery, chopped
- 1 1/2 teaspoons dried sage
- 1 teaspoon poultry seasoning
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 3 slices of white toast, crumbled
- 1/2 cup milk
- 3 large eggs, lightly beaten
- 2 to 2 1/2 cups chicken stock or broth (turkey drippings if available)
- 2 tablespoons butter, cut into small slivers, for topping
Instructions
- Preheat your oven to 400°F (200°C).
- In a medium bowl, stir together all the ingredients for the cornbread (cornmeal, flour, buttermilk, eggs, and vegetable oil) until just combined. Be careful not to overmix.
- Pour the cornbread batter into a lightly greased 9-inch cast iron pan or a 9-inch baking pan. Bake for 20 to 25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
- Allow the cornbread to cool completely, then crumble it into small, uniform pieces. Ideally, prepare this a day or two in advance and let the crumbled cornbread dry out slightly for best results; this ensures optimal liquid absorption.
- In a large, heavy-bottomed pan, melt 8 tablespoons of butter over medium heat. Add the finely chopped celery and onion and cook until they are tender and translucent, which usually takes about 8-10 minutes.
- Stir in the dried sage, poultry seasoning, salt, and black pepper into the softened onion and celery mixture. Cook for another minute, allowing the spices to become fragrant and the flavors to fully meld.
- In a very large mixing bowl, combine the crumbled cornbread and the crumbled toast. These two bases provide a wonderful texture combination for the dressing.
