My journey with coconut is quite a tale, one that many might find relatable. I vividly recall a time when the very thought of coconut would make me cringe. In fact, on my fifth birthday, a day meant for pure joy, I was brought to tears upon discovering that my special birthday cake was adorned with shredded coconut. The texture, the unfamiliar taste – it was all too much for my young palate. Little did I know, this childhood aversion was merely a phase, a prelude to a profound appreciation that would blossom years later.
As an adult, coconut has not only earned a place in my heart but has become one of my absolute favorite culinary ingredients. Its versatility is astounding! I now eagerly incorporate its distinct tropical flavor and delightful texture into a wide array of dishes, from adding a delicate chewiness to baked goods to creating a crispy, flavorful coating for succulent chicken or shrimp. This evolution in taste taught me a valuable lesson: sometimes, the flavors we least expect to love become the ones we cherish most. This transformation is precisely why I’m so passionate about sharing this Coconut Celebration Cake recipe; it celebrates the incredible, undeniable charm of coconut in its finest form.

“This recipe is an absolute gem! The cake is wonderfully moist and incredibly light – exactly what I’ve been searching for. Coming from a family of bakers, I’ve misplaced many cherished recipes over the years, but this one reminds me so much of the classic coconut cake we used to make. The Secret to Unmatched Tenderness: White Lily Flour
A key ingredient in achieving the signature tender crumb of this Coconut Celebration Cake is White Lily All-Purpose Flour. This isn’t just any flour; it’s a game-changer for baked goods, especially cakes and biscuits. Unlike most all-purpose flours, White Lily is milled from soft winter wheat, which naturally contains a lower protein content. This lower protein level is crucial because protein is what develops gluten, and too much gluten can lead to a tough, chewy texture in cakes.
When you use White Lily flour, you’re ensuring minimal gluten development, resulting in a cake that is exceptionally fluffy, incredibly tender, and melts in your mouth. It provides a delicate structure that allows the cake to rise beautifully without becoming dense. For anyone aiming for that quintessential Southern-style light and airy cake, White Lily flour is an indispensable tool in your baking arsenal. It truly makes a noticeable difference in the final texture, transforming a good cake into an extraordinary one.

Quick and Easy Recipe: A Modern Take on a Classic
When you think of traditional Southern coconut cakes, you often envision a labor-intensive dessert, particularly when it comes to the frosting. Many classic recipes call for a 7-minute frosting, which typically requires a double boiler, a meticulous process involving egg whites, and what feels like an endless amount of beating to achieve the perfect airy consistency. While undeniably delicious, it can be a daunting and time-consuming task for even experienced bakers.
This Coconut Celebration Cake, however, redefines ease without compromising on taste. Its icing is delightfully straightforward, yet every bit as decadent and heavenly as its traditional counterparts. Crafted by gently folding whipped cream into a luscious mixture of sugar, tangy sour cream, and ample shredded coconut, this frosting eliminates all the fuss. The result is a wonderfully creamy, rich, and distinctly coconut-flavored topping that complements the moist cake layers perfectly, proving that an exquisite celebration cake doesn’t have to be complicated to be utterly divine.
Precision in Baking: How to Measure Flour Correctly for a Perfect Cake
Achieving a perfectly moist and tender cake starts long before the ingredients hit the bowl – it begins with accurate measurement, especially when it comes to flour. Incorrectly measured flour is one of the most common culprits behind dry, dense cakes. Flour, particularly when stored, tends to settle and compact, meaning a scoop straight from the bag could contain significantly more flour than intended. To ensure your Coconut Celebration Cake turns out perfectly:
- **Fluff the Flour:** Before measuring, use a fork or whisk to gently aerate the flour in its bag or container. This loosens any compaction and ensures a more consistent density.
- **Spoon and Level Method:** Do not scoop the measuring cup directly into the flour. Instead, gently spoon the fluffed flour into your dry measuring cup until it overflows slightly.
- **Level Off:** Use the flat back of a knife or a straight edge to level off the excess flour, ensuring a precise and accurate measurement. This method prevents overpacking and guarantees that your cake will have the ideal moisture and texture. For ultimate precision, especially with delicate cakes, using a kitchen scale to measure flour by weight is highly recommended.
Storing Your Coconut Celebration Cake: Keeping it Fresh and Flavorful
To preserve the exquisite taste and tender texture of your Coconut Celebration Cake, proper storage is essential. Due to its creamy filling and frosting, this cake requires refrigeration. Once fully assembled and frosted, the cake should be carefully wrapped. I recommend using plastic wrap, ensuring it covers the entire cake tightly to prevent it from drying out or absorbing any refrigerator odors. For best quality and flavor, store the cake in the refrigerator for up to 4 days. The flavors actually deepen and meld beautifully over the first day, often tasting even better after chilling. For longer storage, slices can be individually wrapped in plastic wrap and then aluminum foil, then frozen for up to a month. Thaw in the refrigerator overnight before serving.

Coconut Celebration Cake features three layers of tender, mouth-watering cake with a creamy coconut filling and a luscious coconut frosting. This decadent coconut cake is perfect for any celebration, delivering unmatched flavor and a truly special experience.
Equipment
- 3 9-inch cake pans
- Electric Stand Mixer
Ingredients
- 3 cups White Lily® Enriched Bleached All-Purpose Flour
- 2 teaspoons baking powder
- 1 cup butter, softened
- 2 cups sugar
- 4 large eggs
- 1 cup whole milk
- 1 teaspoon vanilla extract
Filling/Frosting
- 1 1/2 cups sugar
- 1 cup sour cream
- 1 (14-ounce) package sweetened shredded coconut
- 3/4 cup heavy cream, whipped
Instructions
- Heat oven to 350º F. Lightly coat three 9-inch round cake pans with no-stick cooking spray.
- Whisk together flour and baking powder in a medium bowl. Set aside.
- Beat butter with an electric mixer on medium speed until light and fluffy. Gradually add sugar, continuing to mix until very light and creamy, about 4 minutes.
- Add eggs, one at a time, beating for one minute after each addition to fully incorporate.
- On low speed, beat in 1/3 of the flour mixture into the egg mixture until just blended. Then, beat in 1/2 cup of milk until blended. Repeat this process, ending with the final addition of flour. Stir in vanilla extract until combined.
- Divide the batter evenly among the prepared pans. Bake for 20 to 25 minutes, or until a toothpick inserted into the center of a cake layer comes out clean. Cool on a wire rack for 10 minutes before carefully removing the cakes from their pans. Allow to cool completely on the wire rack.
- While the cake is baking, prepare the filling and frosting. In a medium bowl, stir sugar and sour cream together until well blended. Reserve 1/3 cup of the shredded coconut and set it aside for garnish. Add the remaining coconut to the sour cream mixture and blend well. For the frosting, fold 1 cup of this sour cream mixture into the prepared whipped cream. Chill both the remaining sour cream mixture (for the filling) and the frosting until the cake layers are completely cool.
- To assemble, spread the chilled sour cream mixture evenly between the cooled cake layers, leaving about a 1/4-inch border uncovered around the edge of each layer. Then, spread the whipped cream frosting generously over the top and sides of the cake. The frosting may appear to run slightly down the sides initially, but it will thicken as the cake chills. Finally, sprinkle the reserved coconut over the top of the cake for a beautiful finish.
- Chill the assembled cake for at least one hour, uncovered, to allow the frosting to set and the flavors to meld. Serve immediately or cover and chill for up to three days for an even deeper flavor profile.
Notes
I typically use salted butter for this recipe. If you opt for unsalted butter, I recommend adding a pinch or two (about 1/4 teaspoon) of salt to the batter to balance the flavors.
