Vegetarian Sloppy Joes

These vegan sloppy joes, featuring hearty lentils and mushrooms, are incredibly satisfying. You won’t miss the meat one bit!
Ingredients
- 2 tablespoons Vegetable oil, divided
- 8 to 10 ounces mushrooms (white or cremini), diced
- 1/2 white onion, diced
- 1 large carrot, diced
- 1 stalk celery, diced
- 1/2 green bell pepper, diced
- 3/4 cup cooked lentils
- 1/2 to 3/4 cup ketchup
- 1 teaspoon vegetarian Worcestershire sauce
- 1/2 teaspoon mustard
- sea salt and black pepper to taste
- 4 whole wheat buns
Instructions
- In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the diced mushrooms and sauté until they are nicely browned and have released their moisture. Remove the browned mushrooms from the pan and set them aside.
- Add the remaining 1 tablespoon of oil to the same pan. Sauté the diced onion over medium heat until it becomes soft and translucent, typically about 3-5 minutes. Then, add the diced carrots, celery, and bell pepper to the pan and continue to cook for another 5 minutes, allowing them to soften slightly.
- Return the sautéed mushrooms to the pan with the vegetables. Stir in the cooked lentils, ketchup, vegetarian Worcestershire sauce, and mustard. Reduce the heat to low and mix everything thoroughly to combine. Season generously with sea salt and freshly ground black pepper to taste. Allow the mixture to simmer gently for a few minutes to let the flavors meld.
- Serve the warm vegetarian sloppy joe mixture generously piled between toasted whole wheat buns.
Notes
For an even richer and deeper flavor profile, consider adding 1/2 of a vegetable bouillon cube to the pan when you are sautéing the onions. This small addition can significantly enhance the savory notes of the sloppy joe mixture.
