- 1 medium onion, diced
- 1 green bell pepper, diced
- 1 (10-ounce) can Rotel diced tomatoes and green chiles, spicy (or mild, to taste)
- 1 (8-ounce) package Velveeta pasteurized prepared cheese product, cubed
- 3 cups chopped cooked chicken
- 1 (10.75-ounce) can cream of chicken soup
- 1/2 cup sour cream
- 1 teaspoon ancho chili powder
- 1/2 teaspoon ground cumin
- 1 cup shredded Cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/2 cup crushed Dorito chips

Preheat oven to 350 degrees F (175 degrees C). Cook pasta according to package directions until al dente.
