Sweet Potato Ice Cream with Marshmallow Swirl and Candied Pecans

- 2/3 cup granulated sugar
- 1/4 cup packed brown sugar
- 2 cups heavy whipping cream
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 2 ounces cream cheese, softened
- 6 egg yolks
- 1 teaspoon vanilla extract
- 1 cup cooked pureed sweet potato, chilled
- 1/2 cup marshmallow sauce
- 2/3 cup chopped pecans
- 2 tablespoons butter
- 2 teaspoons sugar

In a medium saucepan, combine the heavy cream, granulated sugar, brown sugar, salt, and ground cinnamon. Bring the mixture just to a boil over medium heat, stirring occasionally. Remove from heat and whisk in the softened cream cheese until smooth and fully incorporated.
