There’s nothing quite like a warm, hearty casserole to bring comfort to the soul, especially as the crisp air of autumn settles in. It’s the perfect meal to satisfy those cravings for a home-cooked, comforting dish, a delightful preview of the holiday flavors without the wait for Thanksgiving.

Why Casseroles Are a Cold-Weather Essential

Chicken casseroles hold a special place in my recipe repertoire, particularly during the colder months. They are the epitome of comfort food, offering satisfying warmth and delicious flavors with minimal fuss. Beyond their comforting appeal, casseroles are incredibly economical, stretching ingredients to feed a family generously. They are also fantastic for utilizing leftovers, transforming them into new, exciting meals, and often, the casserole itself becomes an even more delicious leftover the next day! If you love a good chicken casserole, you might also enjoy Sandy’s Chicken, a cheesy baked delight, our rustic Chicken Cobbler, or the ever-popular Chicken Cornbread Casserole.

Mastering the Perfect Chicken: Our Poaching Method

The secret to an exceptionally tender and flavorful chicken in this casserole lies in our simple yet effective poaching method. Forget dry, rubbery chicken; this technique guarantees succulent results every time. To poach, simply add boneless, skinless chicken breasts to a pot and cover them with just enough water. Introduce a medley of aromatics like celery, carrot, half an onion, and a touch of thyme, along with salt and pepper. Bring the water to a boil, then immediately reduce the heat to a gentle simmer for just two minutes. The magic happens next: cover the pot, remove it from the heat, and let it rest for 30 minutes. This allows the chicken to gently cook through in the residual heat, absorbing all the wonderful flavors from the poaching liquid. Once cooled, dice the chicken and remember to reserve some of that rich broth – it’s a crucial ingredient for the stuffing!

For those times when you need an even quicker shortcut, this casserole is incredibly adaptable. Feel free to use a pre-cooked rotisserie chicken, shredded and ready to go, or even leftover turkey from a previous meal. Both options will deliver fantastic flavor and texture, making this dish versatile for any occasion.

Crafting the Irresistibly Creamy Base

The foundation of this Chicken and Stuffing Casserole’s incredible moistness and creamy texture comes from a simple yet powerful combination of ingredients. A can of classic cream of chicken soup provides a rich, savory backdrop, while a splash of milk and a dollop of mayonnaise contribute to an unparalleled velvety consistency. This creamy mixture perfectly coats the chunks of chicken and the sautéed vegetables – diced onions, celery, and sliced mushrooms – ensuring every bite is bursting with flavor and moisture. The vegetables aren’t just for texture; when lightly browned in olive oil, they add a depth of savory goodness that complements the chicken and stuffing beautifully.

Prepare Ahead for Effortless Entertaining

One of the many benefits of this Chicken and Stuffing Casserole is its make-ahead potential. You can easily assemble the entire dish the night before, cover it tightly, and refrigerate it. When you’re ready to bake, simply add an extra 5-10 minutes to the cooking time to ensure it heats through evenly. This feature makes it an ideal option for busy weeknights, holiday gatherings, or whenever you need a delicious meal prepared in advance.

This Chicken and Stuffing Casserole features tender chunks of white chicken meat enveloped in a creamy stuffing mixture with sautéed onion, celery, and mushrooms.

Ingredients

  • 2 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1/4 teaspoon dried thyme
  • 1 carrot
  • 2 celery stalks (1 stalk diced, 1 for poaching)
  • 1 yellow onion (half cut in half for poaching, one half diced)
  • 6-8 mushrooms, sliced
  • 1 tablespoon olive oil
  • 1 can (10.5 oz) cream of chicken soup
  • 1/4 cup mayonnaise
  • 1/2 cup milk
  • 4 cups stuffing mix (e.g., Pepperidge Farm)
  • 2 tablespoons butter, melted
  • 1/2 – 3/4 cup reserved chicken broth from poaching

Instructions

  1. To poach chicken: Place chicken breasts in a pot and add just enough water to cover. Add about 1/2 teaspoon salt, 1/4 teaspoon pepper, 1/4 teaspoon dried thyme, half of the onion (cut in half), 1 celery stalk, and the carrot.
  2. Bring the water to a boil, then immediately reduce to a simmer for 2 minutes. Remove the pan from heat and cover it tightly. Let sit for 30 minutes. Carefully remove chicken from the liquid and set aside to cool. Reserve 1/2 to 3/4 cup of the poaching broth. Once cooled, dice the chicken into bite-sized pieces.
  3. Preheat your oven to 350°F (175°C).
  4. In a nonstick skillet, heat olive oil over medium heat. Add the diced onion, diced celery, and sliced mushrooms. Sauté until the vegetables are lightly browned and tender, about 5-7 minutes. Season with a pinch of salt and pepper.
  5. In a large bowl, combine the cream of chicken soup, mayonnaise, milk, and the reserved diced chicken. Mix thoroughly until well combined. Stir in 1 cup of the dry stuffing mix.
  6. Lightly spray a 9×13-inch casserole dish with cooking spray. Transfer the chicken and creamy mixture evenly into the prepared dish.
  7. Evenly sprinkle the remaining 3 cups of dry stuffing mix over the top of the chicken mixture. Drizzle the melted butter over the stuffing layer, then slowly and evenly pour the reserved chicken broth over the top, ensuring the stuffing mix has a chance to soak it up for moisture and flavor.
  8. Bake for 30 minutes, or until the casserole is bubbly and the stuffing topping is golden brown and crispy. Let stand for a few minutes before serving.
