Cheddar Corn Casserole is a rich and delicious side with lots of cheddar cheese and bacon, a true holiday favorite.

Equipment

  • 9×13-inch baking dish

Ingredients

  • 3 cups shredded cheddar cheese
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon black pepper
  • 3/4 cup milk
  • 4 ounces cream cheese, softened
  • 2/3 cups sliced green onions, divided
  • 1/4 cup chopped pickled jalapenos
  • 4 (15.25-ounce) cans Del Monte® Whole Kernel Corn, well drained
  • 4 slices bacon, cooked and crumbled

Instructions

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, toss together 2 1/2 cups of the shredded cheddar cheese (reserve 1/2 cup for topping), flour, and black pepper until well combined. This step helps prevent the cheese from clumping and ensures it melts evenly into the casserole.
  • In a 9×13-inch baking dish, stir together the milk, softened cream cheese, 1/3 cup of the sliced green onions (reserve the remaining 1/3 cup for topping), and chopped pickled jalapenos until smooth. Ensure the cream cheese is fully softened for easy mixing.
  • Add the well-drained corn and the cheese mixture to the baking dish. Stir gently but thoroughly to ensure all ingredients are evenly distributed and coated.
  • Cover the baking dish with aluminum foil and bake for 30 minutes in the preheated oven. Covering prevents the top from browning too quickly and allows the casserole to heat through evenly and become wonderfully creamy.
  • After 30 minutes, remove the foil. Evenly sprinkle the remaining 1/2 cup of shredded cheddar cheese, the remaining 1/3 cup of green onions, and the cooked, crumbled bacon over the top of the casserole. Return the uncovered dish to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly and the casserole is heated through. This final bake gives it a beautiful golden crust and crispy toppings.

This Cheddar Corn Casserole is also a fantastic way to utilize leftover Easter ham. Simply chop about 2 cups of cooked ham and add it to the ingredient list when you’re mixing everything together. The ham adds an extra layer of savory flavor and makes the casserole even heartier, transforming it into a complete meal or a more substantial side dish. This ensures nothing goes to waste and your holiday leftovers get a delicious second life.
