The Secret Ingredient: White Lily Premium Flour Blends
For generations, White Lily Flour has been synonymous with Southern baking excellence, particularly cherished for crafting the lightest, fluffiest biscuits. Building on this esteemed legacy, White Lily proudly unveiled three groundbreaking Premium Flour Blends earlier this year: the versatile All-Purpose Wheat, the innovative Wheat and White Grape Seed Blend, and the unique Wheat and Red Grape Seed Blend. These high-quality flour blends represent a new frontier for at-home bakers, offering unparalleled baking experiences and distinct flavor profiles. We wholeheartedly encourage every baking enthusiast to experiment with these remarkable blends – their performance and taste contributions are truly exceptional.
At the heart of White Lily’s Premium Flour Blends is Shepherd’s Grain wheat, sustainably grown by dedicated farmers in the picturesque Pacific Northwest. This commitment to quality and transparency extends further: each bag of White Lily flour features a unique traceability code. By entering this code on the White Lily website, consumers can connect directly with the farmers who cultivated the grain in their specific bag. This innovative approach fosters a wonderful link between the consumer and the producer, building trust and appreciation for the journey of your ingredients. You can learn more about this incredible process and my personal visit to a Shepherd’s Grain wheat field here.

Exploring the Unique Flavors of Grape Seed Flour Blends
While the All-Purpose Wheat Flour stands as a robust choice for any recipe calling for traditional wheat flour, the Red Grape Seed and White Grape Seed Blends truly shine with their distinctive characteristics, inviting culinary creativity into your kitchen. These innovative flours are crafted by finely grinding red and white grape seeds – a sustainable by-product of the wine-making process – and blending them with all-purpose wheat flour. The result is a nuanced flour that imparts a subtle yet noticeable flavor complexity to your baked goods.
From personal experience, the Red Grape Seed Blend harmonizes beautifully with chocolate, adding an intriguing depth to desserts. I’m eagerly anticipating the opportunity to incorporate it into a savory crust for a beef pot pie, believing its robust notes would complement the richness of the filling perfectly. Conversely, the White Grape Seed Blend proves to be an exceptional partner for fruit-based creations. Its delicate essence enhances the natural sweetness of fruits, and it’s this very quality that makes it an indispensable ingredient for the extraordinary flavor and texture of these Cheesy Caramelized Onion Flatbreads.

The Perfect Appetizer or Light Meal
Imagine a crisp, golden crust, generously laden with an abundance of luscious melted cheese, tender pear slices, deeply savory caramelized onions, and a scattering of toasted pecans that provide a delightful crunch. The White Grape Seed Blend crust, with its subtle yet distinctive character, forms the ideal canvas for these vibrant toppings, transforming this flatbread into an utterly amazing appetizer. Paired with a fresh, vibrant salad, it also makes for an elegant and satisfying light dinner, perfect for any season.

Crafting Your Gourmet Flatbreads: A Step-by-Step Guide
Creating these Cheesy Caramelized Onion Flatbreads is a rewarding experience, combining simple techniques with gourmet results. Let’s dive into the details:
The Art of Caramelized Onions
Caramelizing onions is a process that requires patience but yields incredible depth of flavor. By slowly cooking thinly sliced sweet onions in a blend of olive oil and butter, their natural sugars intensify and transform into a rich, golden-brown, almost jam-like consistency. This extended cooking time is crucial for developing the complex sweetness and savory notes that form the foundation of these flatbreads. Towards the end, minced garlic, balsamic vinegar for a touch of tang, sugar to aid in browning, and fresh thyme are added, creating an aromatic and irresistibly flavorful topping that is far more than just “cooked onions.” Seasoning with salt and pepper ensures the perfect balance.
The Delightful Dough: White Lily’s White Grape Seed Blend
The crust is where White Lily’s Premium White Grape Seed Blend truly shines. This unique flour contributes not only to the dough’s workability but also imbues the baked flatbread with a subtle nutty, almost fruity undertone that complements the toppings beautifully. The dough itself is surprisingly straightforward: warm water activates the yeast and a touch of sugar, creating the perfect environment for a light and airy base. Once the White Lily flour, olive oil, and salt are incorporated, a brief minute of kneading on a floured surface is all that’s needed. A short rest allows the gluten to relax, making the dough easy to roll out into perfect, thin rectangles. This simple dough preparation ensures a tender yet crisp crust that holds up wonderfully to the generous toppings.
Assembling Your Culinary Masterpiece
Once your caramelized onions are ready and your dough has had its brief rest, the assembly begins. Preheat your oven to 425 degrees Fahrenheit and prepare two baking sheets, lightly greasing them to prevent sticking. Divide the dough into two equal portions, rolling each into an approximately 14×8-inch rectangle. A quick 10-minute pre-bake ensures a crisp base before the toppings are added. Then, half of the rich caramelized onions, delicate pear slices, creamy mozzarella, and crunchy pecans are distributed evenly over each par-baked crust. Back into the oven they go for another 10 to 15 minutes, until the cheese is bubbling and golden, and the crust reaches peak perfection. A final sprinkle of tangy blue cheese just before serving adds a piquant finish, bringing all the flavors into glorious harmony. Slice into elegant wedges and serve warm for the ultimate experience.

Ingredients
Caramelized Onions
- 3 medium sweet onions, thinly sliced
- 2 tablespoons Olive oil or Vegetable oil
- 1 tablespoon butter
- 2 cloves garlic, minced
- 1 tablespoon balsamic vinegar
- 1 1/2 teaspoons sugar
- 1 teaspoon chopped fresh thyme
- salt and pepper to taste
Flatbread Dough
- 1 cup warm water, 110 to 120 degrees F
- 1 (1/4-ounce) packet active dry yeast
- 1 teaspoon sugar
- 2 1/4 cups White Lily All-Purpose Wheat and White Grape Seed Blend
- 2 tablespoons Olive or Vegetable oil
- 1 teaspoon salt
Remaining Ingredients
- 2 ripe pears, peeled, cored, and thinly sliced
- 3 cups shredded mozzarella cheese
- 1/4 cup chopped pecans
- 1/4 cup crumbled blue cheese
Instructions
-
Heat 2 tablespoons oil and 1 tablespoon butter in a large pan over medium-low heat. Add the thinly sliced onions and cook for 20 to 25 minutes, stirring occasionally. The onions should become deeply golden brown and tender, reducing significantly in volume.
-
Stir in the minced garlic and cook for an additional 1 minute until fragrant. Be careful not to burn the garlic.
-
Remove the pan from heat. Stir in the balsamic vinegar, sugar, and chopped fresh thyme. Season generously with salt and pepper to taste, adjusting as needed. Set aside.
-
In a medium bowl, combine the warm water (ensure it’s between 110 to 120 degrees F to properly activate the yeast), the packet of active dry yeast, and 1 teaspoon of sugar. Let this mixture sit for 10 minutes until it becomes frothy, indicating the yeast is active.
-
To the yeast mixture, stir in the White Lily All-Purpose Wheat and White Grape Seed Blend flour, 2 tablespoons of olive or vegetable oil, and 1 teaspoon of salt until a shaggy dough forms. Transfer the dough to a lightly floured surface and knead gently for 1 minute until it comes together. Cover the dough and let it rest for 5 minutes. This brief rest helps the gluten relax, making the dough easier to roll.
-
Preheat your oven to 425 degrees F (220 degrees C). Lightly grease two baking sheets. Divide the rested dough in half.
-
On a lightly floured surface, roll each ball of dough into an approximate 14×8-inch rectangle. Carefully transfer each rectangle to a prepared baking sheet. Bake the crusts in the preheated oven for 10 minutes to partially cook them.
-
Remove the partially baked flatbreads from the oven. Evenly top each flatbread with half of the prepared caramelized onions, thinly sliced pears, shredded mozzarella cheese, and chopped pecans. Return to the oven and bake for another 10 to 15 minutes, or until the cheese is melted and bubbly, and the crust edges are lightly browned and crisp. Once out of the oven, sprinkle each hot flatbread generously with the crumbled blue cheese. Cut into wedges and serve immediately while warm.
