Peach Cobbler Bars: Your New Favorite Easy Summer Dessert
These Peach Cobbler Bars offer a delightful blend of buttery richness and a sweet, sugary glaze. Crafted with the freshest summer peaches and infused with warming spices like cinnamon, nutmeg, and ginger, they redefine the classic peach cobbler experience in a convenient, handheld form.

The Irresistible Allure of Peach Cobbler Bars
Peach cobbler has long been a cherished symbol of summer in the South, a dessert that evokes warm memories of family gatherings and abundant fresh fruit. While traditional cobbler served in a bowl with a spoon holds a special place in my heart, the idea of transforming this beloved treat into easy-to-serve bars was simply too tempting to resist. My Easy Peach Cobbler and Oatmeal Cookie Peach Cobbler recipes are staples, but these Peach Cobbler Bars introduce a new level of convenience without sacrificing any of that incredible, comforting flavor.

A Taste of Southern Sunshine: Celebrating Fresh Peaches
Living in the heart of South Carolina’s vibrant peach country, I’m incredibly fortunate to have a farm stand brimming with fresh, ripe peaches just a short stroll from my home. This abundance inspires me to incorporate these sweet, juicy gems into a wide variety of dishes, celebrating their versatility throughout the summer season. From fluffy peach pancakes to refreshing peach cocktails and even savory shrimp tostadas with grilled peach salsa, peaches truly elevate every recipe. This intimate connection to fresh, local produce ensures that every bite of these Peach Cobbler Bars bursts with authentic, sun-kissed flavor.
While I’ll always appreciate the comforting warmth of a classic bowl of peach cobbler, these convenient bars are a game-changer for effortless entertaining and quick clean-up. There’s no need for spoons or bowls, making them ideal for picnics, potlucks, or simply enjoying a sweet treat on the go.

Crafting the Perfect Flavor Profile: Buttery, Spiced, and Sweet
What truly sets these Peach Cobbler Bars apart is their meticulously balanced flavor profile. Each bar boasts a rich, buttery base and topping that cradles a generous layer of tender, spiced peaches. The spices—cinnamon, nutmeg, and ginger—are carefully chosen to complement the natural sweetness of the peaches, adding a warm, aromatic depth without overpowering. A subtle hint of almond extract elevates the overall taste, introducing a delicate nuance that makes these bars truly special. Finally, a simple, sweet glaze drizzled over the cooled bars provides an extra touch of sweetness and a beautiful finish.
This recipe yields a full 9×13-inch pan of bars, making it perfect for feeding a crowd. Whether you’re hosting a backyard barbecue, contributing to a potluck, or simply want to have plenty of treats on hand, these bars are an excellent choice. They are absolutely delicious served plain, but for an extra indulgent experience, a scoop of vanilla ice cream or a dollop of whipped cream takes them to another level of dessert heaven.
Essential Ingredients for Sublime Results
Achieving the perfect Peach Cobbler Bar starts with quality ingredients. Here’s what you’ll need and some tips for success:
Selecting the Best Peaches
The star of this recipe is, of course, the peaches. I highly recommend using fresh, very ripe summer peaches for their unparalleled sweetness and juicy texture. Ripe peaches will have a fragrant aroma and a slight give when gently squeezed. While fresh is ideal, you can certainly use frozen peaches if fresh aren’t available. If using frozen, there’s no need to thaw them beforehand; simply add them directly to the spice mixture. Ensure your peaches are peeled, pitted, and sliced to an even thickness for consistent cooking and a delightful mouthfeel.
The Art of the Buttery Crust
The crust for these bars is a delightful combination of all-purpose flour, old-fashioned oats, and baking powder, creating a tender yet slightly chewy texture. Cold, cubed butter is cut into the dry ingredients, forming a crumbly mixture that becomes wonderfully rich and flaky when baked. The addition of an egg, sour cream, vanilla extract, and almond extract to a portion of this mixture creates a moist, flavorful base and a crumbly topping. Sour cream adds a lovely tang and helps keep the bars moist and tender, contrasting beautifully with the sweet peaches and glaze.
A Symphony of Spices
The warming spices of cinnamon, nutmeg, and ginger are crucial for enhancing the peach flavor. They add a comforting, aromatic quality that transforms simple fruit into a gourmet experience. Don’t be tempted to skip them! The almond extract, though optional, provides a subtle, sophisticated note that beautifully complements the peaches and other spices.

Baking Tips for Flawless Peach Cobbler Bars
Creating these delightful bars is straightforward, but a few tips can ensure perfect results every time:
- Pan Preparation: Always line your 9×13-inch pan with aluminum foil and spray it thoroughly with nonstick baking spray (preferably with flour). This makes lifting the cooled bars out of the pan incredibly easy and ensures a clean cut.
- Peach Selection: As mentioned, very ripe peaches are key for maximum sweetness and flavor. If your peaches aren’t perfectly ripe, a little extra brown sugar or a sprinkle of white sugar can compensate.
- Spice Blend: Don’t skimp on the spices! Cinnamon, nutmeg, and ginger are essential for that classic cobbler taste.
- Cutting in Butter: When preparing the crust, ensure your butter is cold and cut into small cubes. Using a pastry blender or your fingertips (working quickly to prevent the butter from warming) will help create the perfect crumbly texture.
- Layering: Press half of the flour mixture firmly into the bottom of the pan to create a solid base. Spread the peach mixture evenly, then sprinkle the remaining flour mixture loosely over the peaches for that signature cobbler topping.
- Glaze or No Glaze: The simple powdered sugar and milk glaze adds a lovely touch of sweetness and a beautiful sheen. However, if you prefer a less sweet dessert or plan to serve them with ice cream or whipped cream, the glaze is entirely optional.
- Cooling: Allow the bars to cool completely before drizzling with glaze and cutting. This ensures the bars set properly and are easier to slice neatly.
Serving Suggestions and Delicious Variations
These Peach Cobbler Bars are incredibly versatile. While fantastic on their own, consider these options to elevate your dessert experience:
- Classic Ala Mode: A scoop of premium vanilla bean ice cream melting over a slightly warm bar is simply divine.
- Creamy Delight: A dollop of freshly whipped cream adds a light, airy contrast to the rich bars.
- Nutty Crunch: For added texture, sprinkle chopped pecans or walnuts over the peach layer before baking.
- Berry Fusion: In addition to peaches, you could add a handful of fresh blueberries or raspberries to the fruit mixture for a delightful berry-peach combination.
- Citrus Zest: A little orange or lime zest added to the glaze can provide a bright, refreshing twist.
Storing Your Peach Cobbler Bars
Store leftover Peach Cobbler Bars in an airtight container at room temperature for up to 2-3 days, or in the refrigerator for up to 5 days. You can also freeze individual bars for longer storage; wrap them tightly in plastic wrap and then in foil. Thaw at room temperature or gently warm in the microwave or oven.

Ingredients
- 2 cups firmly packed light brown sugar, divided
- 3 tablespoons cornstarch
- 3/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 8 cups peeled, pitted, and sliced fresh peaches (about 8 peaches)
- 1/2 tablespoon lemon juice
- 3 cups all-purpose flour
- 1 cup old-fashioned oats
- 1 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 cup cold butter, cubed
- 1 large egg
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
Glaze
- 1 cup powdered sugar
- 2 tablespoons milk
Instructions
-
Preheat oven to 350 degrees F (175 C). Line a 9×13-inch pan with aluminum foil, leaving an overhang on the sides for easy lifting, and spray thoroughly with nonstick baking spray with flour.
-
In a large bowl, combine 1 cup brown sugar, cornstarch, cinnamon, nutmeg, and ginger. Add the peeled, pitted, and sliced peaches along with lemon juice. Stir gently until all ingredients are well combined and the peaches are evenly coated. Set aside.
-
In a separate large bowl, combine the remaining 1 cup brown sugar, all-purpose flour, old-fashioned oats, baking powder, and salt. Whisk together until well mixed. Using a pastry blender or your fingertips, cut in the cold, cubed butter until the mixture resembles coarse crumbs.
-
In a small bowl, whisk together the egg, sour cream, vanilla extract, and almond extract until smooth.
-
Add the whisked egg mixture to the flour and oat mixture, stirring gently with a spoon or spatula until just combined. Be careful not to overmix.
-
Press half of the prepared flour mixture evenly into the bottom of the lined and greased 9×13-inch pan. Spread the peach mixture evenly over the pressed crust.
-
Sprinkle the remaining flour mixture evenly over the peaches, creating a crumbly topping.
-
Bake for 40 to 45 minutes, or until the top is golden brown and the peach filling is bubbly. A wooden skewer inserted into the crumbly topping should come out with moist crumbs, not wet batter.
-
While the bars cool, prepare the glaze. In a small bowl, whisk together the powdered sugar and milk until smooth. Once the bars have cooled completely, drizzle the glaze evenly over the top. Allow the glaze to set before slicing and serving.
