Caramel Apple Quesadillas

Ingredients

  • 1 tablespoon butter
  • 2 Granny Smith apples, peeled and finely diced
  • 2 tablespoons packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • pinch of nutmeg
  • 8 flour tortillas
  • 1/2 cup caramel sauce
  • 4 to 6 tablespoons butter (for cooking tortillas)

Cinnamon Sugar

  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon

Toppings

  • Caramel sauce
  • Vanilla ice cream

Instructions

  1. Melt 1 tablespoon of butter in a skillet over medium heat.
  2. Add diced apple and cook until it begins to soften.
  3. Add brown sugar, cinnamon, and nutmeg and cook for 3 to 5 minutes. Remove from heat.
  4. Spread 1 tablespoon of caramel sauce on one side of each tortilla.
  5. Divide the apple mixture evenly between 4 of the tortillas, spreading it out evenly.
  6. Place the remaining 4 tortillas, caramel-side down, on top of the apples.
  7. Wipe the skillet clean and melt 1 tablespoon of butter in the skillet over medium heat. Add 1 quesadilla and cook until browned on each side. Add a little more butter for the second side if necessary.
  8. Repeat with remaining quesadillas.
  9. In a small bowl, mix together the cinnamon sugar.
  10. While still warm, sprinkle with cinnamon sugar.
  11. Serve drizzled with caramel sauce and top with a scoop of ice cream.

I use store-bought caramel ice cream topping for convenience.
