An Unforgettable Journey to the Heart of Creole Cuisine: New Orleans
My recent return to New Orleans, a city perpetually rebuilding and celebrating its resilient spirit since Hurricane Katrina, was nothing short of magical. This particular visit, generously hosted by Zatarain’s, coincided with the unparalleled spectacle of Mardi Gras. If you’ve never experienced Mardi Gras in New Orleans, let me assure you, it deserves the top spot on your travel bucket list. It’s an immersive cultural event unlike any other, a sensory feast of music, dancing, infectious laughter, elaborate costumes, dazzling parades, and a showering of beads. And, of course, perhaps a refreshing Hurricane cocktail or two – all contributing to an atmosphere of pure, unadulterated fun!
While Bourbon Street often conjures images of wild revelry, the true spirit of Mardi Gras is profoundly a family affair, best savored within the vibrant community of its neighborhoods. We found ourselves captivated on St. Charles Avenue, positioned perfectly in front of the historic Ponchartrain Hotel, as we witnessed the magnificent Krewe of Druids Parade and the enchanting Krewe of Nyx Parade sweep by. The sheer joy, creativity, and communal spirit radiating from both participants and spectators was truly heartwarming.

Beyond the parades, we spent countless hours wandering the cobblestone streets of the iconic French Quarter. Every corner turned revealed a new delight: the intricate ironwork balconies, the lively sounds of jazz spilling from open doorways, the intoxicating aromas of Creole and Cajun spices mingling in the air, and the fascinating array of local artists and street performers. It’s a district steeped in history, brimming with unique shops, cozy cafes, and architectural wonders that tell stories of centuries past. Each building, each alleyway, seemed to possess its own distinct personality, making every step an exploration.

Our journey also took us across the mighty Mississippi River to the very heart of Zatarain’s operations, where their beloved products are meticulously crafted. It was an enlightening experience to see the dedication that goes into producing the flavors synonymous with Louisiana cuisine. During our visit, we had the distinct pleasure of watching local food personality Poppy Tooker masterfully demonstrate her technique for making a classic jambalaya. Her passion for Creole and Cajun cooking was palpable, and her insights into the authentic preparation of regional dishes were invaluable.

While at the Zatarain’s facility, we were also among the first to sample some of their exciting new product lines. I can attest that these new additions are truly amazing and promise to bring even more authentic Louisiana flavor to home kitchens everywhere. I’m eagerly anticipating the opportunity to share some innovative recipes incorporating these fantastic new Zatarain’s products with you all very soon!

Crafting the Perfect Creole Potato Salad: The Zatarain’s Difference
Creole Potato Salad is a culinary chameleon, perfectly suited for almost any gathering. Whether you’re hosting a festive Mardi Gras celebration, contributing to a lively potluck, preparing for a casual picnic, or firing up the grill for a summer cookout, this potato salad is sure to be a crowd-pleaser. The key to any truly exceptional potato salad lies in its seasoning, and this Creole rendition leaves no stone unturned in the flavor department. Our goal was to ensure every bite bursts with authentic Louisiana zest, a task easily achieved with the right ingredients.
To infuse an unparalleled depth of flavor right from the start, I took a page from traditional Louisiana cooking by adding Zatarain’s liquid Shrimp & Crab Boil directly to the water in which I cooked the potatoes. This simple, yet brilliant, step guarantees that the potatoes absorb a foundational layer of aromatic, spicy goodness, setting this dish apart from any other potato salad you’ve ever tasted. It’s a game-changer that builds complexity from the inside out, making the potatoes themselves flavorful before any dressing is even added.

Once the potatoes are perfectly tender, the next layer of Creole magic comes from Zatarain’s Creole Seasoning. This iconic blend, renowned for its balance of savory herbs and spices with a subtle kick, is one of my absolute favorite pantry staples. Sprinkling this seasoning over the warm, drained potatoes allows them to fully absorb its vibrant character, ensuring a consistent and robust flavor profile throughout the salad. It’s a seasoning that truly embodies the soulful essence of Creole cooking.

No Creole Potato Salad would be complete without the distinctive tang and spice of authentic Creole mustard. For this recipe, I incorporated Zatarain’s Creole Mustard, which provides that essential pungent, slightly spicy kick that defines true New Orleans flavor. This mustard is then expertly combined with creamy mayonnaise and luscious sour cream, creating a rich, velvety dressing that perfectly balances the bold spices and adds an irresistible texture to the potato salad.
To finish this magnificent dish, I folded in finely chopped celery for a refreshing crunch, vibrant green onions for a mild oniony bite, hearty hard-boiled eggs for added substance and classic appeal, and a generous amount of fresh parsley for herbaceous brightness. Just before serving, a final flourish of Zatarain’s Creole seasoning is sprinkled on top, ensuring an aromatic finish and an extra pop of flavor that will leave everyone craving more. This thoughtful combination of ingredients creates a potato salad that is both deeply satisfying and refreshingly complex.

Why This Creole Potato Salad Stands Out
This Creole Potato Salad isn’t just another side dish; it’s a celebration of flavor and tradition. Its unique blend of Zatarain’s seasonings, from the subtle heat of the Shrimp & Crab Boil infused into the potatoes to the distinctive kick of Creole mustard in the dressing, creates a taste experience that is truly unforgettable. The texture is a delightful contrast of tender potatoes, crisp celery, and creamy dressing, making each spoonful a joy. It’s a versatile dish that holds its own whether served alongside barbecued ribs, fried chicken, or a simple sandwich.
More than just its delicious taste, this potato salad embodies the vibrant spirit of New Orleans cuisine – bold, soulful, and always full of character. It’s the perfect addition to any menu, adding a touch of Southern charm and a burst of flavor that complements almost anything you serve it with, making it an ideal choice for a festive Mardi Gras party, a casual family picnic, or an elegant potluck.

Creole Potato Salad is a uniquely creamy potato salad bursting with flavor and a delightful “zip.” It’s expertly seasoned with authentic Zatarain’s Creole Seasoning and infused with the distinctive tang of Creole mustard, offering a true taste of New Orleans.
Ingredients
- 3 pounds red potatoes
- 1 tablespoon Zatarain’s liquid shrimp and crab boil, (optional, but highly recommended for authentic flavor)
- 1 tablespoon apple cider vinegar
- 3/4 teaspoon Zatarain’s Creole seasoning, plus more for garnish
- 1/3 cup mayonnaise
- 1/3 cup sour cream
- 1/3 cup Zatarain’s Creole mustard
- 1 teaspoon sugar
- 1 stalk celery, finely chopped
- 3 hard-boiled eggs, chopped
- 3 green onions, sliced
- 1 tablespoon chopped fresh parsley
Instructions
- Cut red potatoes into halves or quarters, depending on their size, ensuring they are roughly uniform for even cooking.
- Place the cut potatoes in a large pot and cover them with water, making sure the water level is about an inch above the potatoes. Add the Zatarain’s liquid shrimp and crab boil (if using) and a few generous pinches of salt to the water. This is a crucial step for infusing flavor into the potatoes.
- Bring the water to a rolling boil over high heat, then reduce the heat to a simmer. Cook the potatoes for 15 to 20 minutes, or until they are fork-tender. Drain the cooked potatoes thoroughly.
- Transfer the warm, drained potatoes to a large mixing bowl. Immediately toss them with the apple cider vinegar and Zatarain’s Creole seasoning. This allows the potatoes to absorb the flavors while they are still warm, enhancing the overall taste.
- If you prefer smaller potato chunks in your salad, use a knife to gently chop them up a little more at this stage.
- In a separate small bowl, whisk together the mayonnaise, sour cream, Zatarain’s Creole mustard, and sugar until the dressing is smooth and well combined.
- Pour the mayonnaise mixture over the potatoes in the large bowl and stir gently to combine, ensuring all the potatoes are evenly coated with the creamy dressing.
- Taste the potato salad and season with additional salt and freshly ground black pepper as needed, adjusting to your preference.
- Finally, stir in the finely chopped celery, chopped hard-boiled eggs, sliced green onions, and fresh parsley.
- For an extra touch of flavor and visual appeal, sprinkle a little more Zatarain’s Creole seasoning on top just before serving. Chill the potato salad in the refrigerator for at least an hour, or until ready to serve, to allow the flavors to meld beautifully.
