  • 1 3/4 teaspoons salt, divided
  • 2/3 cup mayonnaise
  • 2/3 cup sour cream
  • 1 egg, lightly beaten
  • 1/4 teaspoon black pepper (If you like black pepper, you may want to add an extra 1/4 teaspoon)
  • 1 (7-ounce) jar diced pimentos, drained
  • 2 cups shredded cheddar cheese, divided
  • 1/2 cup crushed Ritz crackers

Instructions

  1. Grease a casserole dish (approximately 8×12-inches is ideal). Preheat oven to 350 degrees F (175 degrees C).
  2. Place the sliced squash and chopped onion in a large pot. Add enough water just to cover the vegetables. Stir in 1 teaspoon of salt. Bring the mixture to a boil, then reduce the heat to medium-low and simmer until the squash is soft, about 7 minutes. Drain the squash and onion very well, pressing out any excess water.
