Crafting the Perfect Green Bean Layer

The inviting golden-brown topping of crispy fried onions adds an irresistible texture.

You’re truly going to adore the harmonious blend of flavors when the rich green bean casserole, complete with generous amounts of sharp cheddar cheese, is layered over the smooth mashed potatoes. For the green bean component, I prefer using fresh green beans, boiled until perfectly tender, as they offer the best flavor and texture. However, for added convenience, canned or frozen green beans (prepared according to package directions) work wonderfully too. The casserole mixture is completed with a can of creamy mushroom soup, a splash of milk for silkiness, a hint of soy sauce to deepen the savory notes, and of course, plenty of crispy French fried onions for that iconic crunch.

Trust me, if you’re a connoisseur of classic green bean casserole and a lover of fluffy mashed potatoes (and who isn’t?), this Mashed Potato Green Bean Casserole will quickly become a cherished recipe in your culinary repertoire!

Choosing Your Green Beans

For the best flavor and texture, I highly recommend using fresh green beans, boiled until they are crisp-tender. This ensures a vibrant green color and a fresh taste that truly shines through. However, flexibility is key in holiday cooking. If fresh beans aren’t available or you’re short on time, canned green beans (well-drained) or frozen green beans (cooked according to package directions) are excellent substitutes that will still yield a delicious casserole. Whichever you choose, ensure they are cooked sufficiently to be tender before mixing into the casserole base.

A Touch of Heat: Adding Spice

For those who appreciate a little kick in their comfort food, this casserole is easily customizable with a touch of heat. Simply add a pinch or two of cayenne pepper to the green bean mixture before baking. This subtle addition will introduce a delightful warmth that complements the savory and cheesy flavors without overpowering them, adding an exciting dimension to each bite.

Make-Ahead and Storage Tips for Convenience

Preparing this casserole doesn’t have to be a last-minute scramble. You can assemble the entire dish ahead of time, which is a fantastic advantage during busy holiday seasons. Simply prepare the mashed potato layer and the green bean mixture, combine them in your baking dish, cover tightly, and refrigerate for up to 24 hours. The only crucial step is to hold off on adding the French fried onion topping until just before you’re ready to bake. This ensures the onions get perfectly crispy in the oven, providing that essential crunch. Leftovers, if there are any, can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, place the casserole in a 350-degree Fahrenheit oven until warmed through and the topping is delightfully crisp again.

Mashed Potato and Green Bean Casserole is a delicious mash-up of 2 Thanksgiving favorites. You are going to love the crispy onion topping and the creamy, savory layers.

Equipment

  • 9×13-inch baking dish

Ingredients

  • 2 (24-ounce) packages Simply Potatoes® Traditional Mashed Potatoes
  • Black pepper, to taste
  • 4 cups cooked green beans (fresh, canned, or frozen)
  • 1 (10.5-ounce) can condensed cream of mushroom soup
  • 1/3 cup milk
  • 1 teaspoon soy sauce
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1 (6-ounce) can French fried onions, divided (find here)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit (175°C).
  2. Lightly grease a 9×13-inch baking pan. Transfer the Simply Potatoes® Mashed Potatoes into the prepared pan and use a rubber spatula to smooth them into an even layer, forming the base of your casserole.
  3. Season the mashed potatoes generously with black pepper to taste.
  4. In a large mixing bowl, combine the cooked green beans, condensed cream of mushroom soup, milk, and soy sauce. Stir until well combined. Fold in 1 cup of the shredded cheddar cheese and half of the French fried onions. Mix gently.
  5. Carefully pour the green bean mixture evenly over the mashed potato layer in the baking dish.
  6. Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the green bean layer, followed by the remaining half of the French fried onions.
  7. Place the casserole in the preheated oven and bake for 25 to 30 minutes, or until the casserole is bubbly and the French fried onions are golden brown and crispy.

Notes

While I prefer the crisp texture of fresh green beans, boiled until tender, you can easily use well-drained canned green beans or frozen green beans cooked according to package directions. Ensure your chosen green beans are tender before adding them to the casserole mixture for the best results.
