Chicken Artichoke Casserole is a super easy casserole made with boneless chicken breasts, artichoke hearts, and a crunchy sliced almond topping.
Equipment
- Large Skillet
- 9×13-inch baking dish
Ingredients
- 1 tablespoon olive oil
- 4 boneless skinless chicken breasts
- Salt and pepper, to taste
- 1/2 teaspoon poultry seasoning
- 1 package frozen artichoke hearts, defrosted
- 1/3 cup butter
- 1/3 cup diced onion
- 1 garlic clove, minced
- 1/3 cup all-purpose flour
- 1 can chicken broth (about 2 cups)
- 1/2 cup dry white wine
- 3 ounces cream cheese, room temperature and cut into cubes
- 2 tablespoons freshly grated Parmesan cheese
- 1/2 cup sliced almonds
Instructions
- Preheat your oven to 350 degrees F (175 degrees C).
- Heat the olive oil in a large skillet over medium-high heat. Season the chicken breasts generously with salt, pepper, and poultry seasoning. Cook the chicken in the skillet until lightly browned on both sides, about 3-4 minutes per side. The chicken does not need to be cooked through at this stage. Transfer the browned chicken to a lightly greased 9×13-inch baking pan or similarly sized casserole dish.
- Evenly scatter the defrosted artichoke hearts over the chicken breasts in the baking dish.
- In the same skillet (no need to clean it), add the butter and melt it over medium heat. Add the diced onion and minced garlic and cook until softened and fragrant, about 3-5 minutes.
- Sprinkle the flour over the onion and garlic mixture, stirring well to combine and form a roux. Cook for 1 minute, stirring constantly, to cook out the raw flour taste.

If your chicken breasts are very large, it’s recommended to either pound them out to a thinner, more even thickness (about 1/2 to 3/4 inch) or cut each breast horizontally into two thinner pieces. If cutting in half, you may only need to use 2 large chicken breasts for 4 servings.
