Why Asparagus Mornay is a Must-Try Recipe
This Asparagus Mornay recipe stands out as a spring classic for many reasons. First, its elegance. The vibrant green of the asparagus peeking through a golden-brown, bubbly cheese topping makes for a visually stunning presentation on any table. It signals care and attention to detail, without demanding hours in the kitchen.
Second, the flavor profile is simply irresistible. The delicate bitterness of asparagus is beautifully balanced by the rich, savory, and slightly tangy Mornay sauce. The addition of chicken bouillon granules adds an unexpected layer of umami, while a touch of nutmeg provides a warm, sophisticated aroma that elevates the entire dish. And let’s not forget the buttery Ritz crackers, which provide a delightful textural contrast with their crispy, salty crunch. It’s a side dish that truly has it all: fresh vegetables, creamy indulgence, and satisfying texture, making it a guaranteed crowd-pleaser for any meal.

The Origins and Charm of Classic Mornay Sauce
At the heart of this incredible dish is the luxurious Mornay sauce. But what exactly is Mornay sauce? It’s a classic French sauce, a delectable variation of the fundamental Béchamel sauce. Béchamel is one of the five “mother sauces” of French cuisine, made from a roux (butter and flour cooked together) and milk, seasoned with salt, pepper, and often a hint of nutmeg.
Mornay sauce takes this creamy base to the next level by incorporating cheese. Traditionally, Gruyère cheese is used, but Swiss cheese is a fantastic and often more accessible substitute, offering a similar nutty, mild flavor that melts beautifully into the sauce. The secret to a perfect Mornay lies in a smooth, lump-free roux and gradually whisking in the half-and-half until thickened. Our recipe further enhances this classic by adding chicken bouillon granules, which impart an extra layer of savory depth, creating a truly unforgettable sauce that perfectly coats every tender spear of asparagus.

The Essential Cracker Topping: A Buttery, Crispy Finish
While the creamy Mornay sauce is undoubtedly a star, the crushed Ritz crackers are the unsung hero that elevates this Asparagus Mornay from delicious to absolutely divine. These iconic buttery crackers provide a textural contrast that is simply unmatched. Their distinct rich, salty flavor and delicate, flaky crunch create a delightful counterpoint to the tender asparagus and smooth, rich cheese sauce.
When broiled, these crushed crackers toast up beautifully, forming a golden, irresistible crust that adds another layer of flavor and texture. It’s this finishing touch that makes the dish feel complete, offering a satisfying bite with every forkful. While you could technically use other crackers or breadcrumbs, the unique buttery quality of Ritz crackers truly makes this recipe shine. They prove that sometimes, the simplest additions can make the biggest difference, transforming an already wonderful side dish into an extraordinary one.

Asparagus Mornay
By Christin Mahrlig

Ingredients
- 1 1/2 pounds fresh asparagus,, I prefer thick stalks
- 1 tablespoons butter
- 1 tablespoon all-purpose flour
- 1/2 teaspoon chicken bouillon granules
- 1 cup half-and-half
- 1/4 teaspoon paprika
- 1/4 teaspoon salt
- Pinch of ground nutmeg
- 3/4 cup shredded swiss cheese,, about 3 ounces
- freshly ground black pepper
- 5 Buttery crackers,, crushed, (I use Ritz)
Instructions
-
To prepare the asparagus, simply snap off the tough, woody ends – they’ll naturally break at the right spot. Discard these ends. Next, cook the asparagus in a pot of boiling water until it’s crisp-tender, which should take approximately 6 to 8 minutes depending on the thickness of your spears. Drain the cooked asparagus thoroughly and pat it dry with a clean towel to remove excess moisture. Arrange the dried asparagus evenly in a greased baking dish, ready for the sauce.
-
Begin preparing your rich Mornay sauce by melting one tablespoon of butter in a medium-sized saucepan over medium heat. Once the butter is fully melted and slightly shimmering, add one tablespoon of all-purpose flour. Whisk these two ingredients together constantly for about 1 minute. This step creates a roux, which is the base of your creamy sauce and helps to cook out the raw flour taste.
-
Once your roux has cooked for a minute, add the chicken bouillon granules directly to the pan. Then, gradually whisk in one cup of half-and-half. It’s crucial to add the half-and-half slowly, whisking continuously to ensure a smooth mixture and prevent any lumps from forming in your sauce.
-
Continue to cook the sauce over medium heat, bringing it to a gentle simmer. Remember to whisk constantly during this stage. The sauce will gradually thicken as it simmers, reaching a luscious, creamy consistency. Be patient and keep whisking to achieve that perfect velvety texture.
-
Once the sauce has thickened, remove the saucepan from the heat. Stir in the paprika, salt, and a pinch of ground nutmeg. These seasonings are vital for developing the sauce’s distinctive flavor profile.
-
Now, add three-quarters of a cup of shredded Swiss cheese to the warm sauce. Whisk immediately and continuously until the cheese is completely melted and smoothly incorporated into the sauce. The residual heat from the sauce will melt the cheese without overcooking it.
-
Generously pour the freshly prepared Mornay sauce evenly over the cooked asparagus in the greased baking dish. For an extra touch of flavor, season the sauced asparagus with a little freshly ground black pepper to taste.
-
Take your five buttery crackers (like Ritz) and crush them into coarse crumbs. Sprinkle these crushed crackers generously and evenly over the top of the Mornay sauce-covered asparagus. This will create a delicious, crispy topping once broiled.
-
Finally, place the baking dish under a preheated broiler. Broil for just long enough to warm the sauce through and get the cracker crumbs golden brown and crispy. This step happens very quickly, so a critical warning: crackers can burn in an instant! Keep a very close eye on the dish, watching it constantly to prevent burning. Remove once perfectly golden.

Tips for Success and Variations
- **Choosing Asparagus:** Opt for fresh, firm, brightly colored asparagus with tightly closed tips. Thicker stalks often work best for this recipe as they hold up well to blanching and baking without becoming mushy.
- **Perfectly Cooked Asparagus:** Don’t overcook the asparagus in the initial boiling step. It should be “crisp-tender” – still having a slight bite, as it will cook further under the broiler.
- **Smooth Mornay Sauce:** To avoid lumps, ensure your butter and flour are fully combined into a smooth paste (the roux) before slowly adding the half-and-half while whisking vigorously. If lumps still form, you can press the finished sauce through a fine-mesh sieve.
- **Cheese Choices:** While Swiss cheese is recommended for its nutty flavor, other good melting cheeses like Gruyère, white cheddar, or a blend of Parmesan and Fontina can also be used to customize the flavor.
- **Watch the Broiler:** The crushed crackers can go from golden to burnt in a matter of seconds. Keep the dish under constant supervision while broiling.
Serving Suggestions
Asparagus Mornay is incredibly versatile and makes a fantastic accompaniment to a variety of main courses. It’s particularly wonderful with roasted ham or lamb, making it an Easter dinner staple. It also pairs beautifully with grilled chicken, baked fish, or even a simple steak. For brunch, serve it alongside quiches, scrambled eggs, or a delicious frittata for an elevated holiday meal. Its rich flavors and impressive presentation make it suitable for any special gathering.
Make Ahead and Storage
You can prepare the Mornay sauce up to a day in advance. Store it in an airtight container in the refrigerator. When ready to use, gently reheat it over low heat, whisking constantly until smooth and warm. You may need to add a splash of milk or half-and-half to loosen it up if it’s too thick. The asparagus can also be blanched and dried a day ahead and stored in the fridge. Assemble the dish just before broiling for the best results. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven or microwave, though the cracker topping may lose some of its crispness.
Nutritional Benefits of Asparagus
Beyond its delicious taste and versatility, asparagus is also incredibly nutritious. It’s an excellent source of vitamins K, A, C, and E, as well as folate, potassium, and dietary fiber. It contains antioxidants and is known for its anti-inflammatory properties. Incorporating this vibrant green vegetable into your diet, especially when it’s in season, is a wonderful way to enjoy fresh flavors while boosting your nutrient intake.
