Salmon with Bourbon Peach BBQ Sauce

Ingredients
- 1 tablespoon canola oil
- 1 small sweet onion, chopped
- 2 cloves garlic, minced
- 2 cups chopped fresh peaches, or frozen, defrosted
- 1/2 cup ketchup
- 1/3 cup Four Roses Bourbon
- 1/3 cup apple cider vinegar
- 1 teaspoon ground mustard
- 1/8 teaspoon allspice
- 1/2 teaspoon chipotle chili powder
- 1 teaspoon Worcestershire sauce
- 1 tablespoon molasses
- 4 salmon filets
Instructions
- Heat canola oil in a medium pot over medium heat. Add the chopped onion and sauté for 3 minutes until softened. Stir in the minced garlic and continue to sauté for an additional 2 minutes until fragrant.
- Add the remaining sauce ingredients to the pot: chopped peaches, ketchup, Four Roses Bourbon, apple cider vinegar, ground mustard, allspice, chipotle chili powder, Worcestershire sauce, and molasses. Stir well to combine all ingredients. Bring the mixture to a gentle simmer and cook for 20-30 minutes, or until the sauce thickens to your desired consistency. Remember to stir occasionally to prevent the bottom from burning.
- Approximately halfway through the simmering process, use a potato masher or the back of a spoon to gently break down the peach chunks. This action helps to release more peach flavor into the sauce and contributes to a thicker, smoother texture.
- While the sauce finishes simmering, preheat your gas grill or a grill pan over medium-high heat. Lightly coat the tops of your salmon filets with a small amount of oil to prevent sticking.
- Place the salmon filets on the hot grill, skin-side up (if skin-on). Cook for approximately 4 minutes. Carefully flip the salmon filets over and cook for another 4-5 minutes, or until the salmon reaches your desired degree of doneness and flakes easily with a fork.
- Once the salmon is almost fully cooked, generously brush each filet with a thick layer of the Bourbon Peach BBQ Sauce. Allow the sauce to warm through and slightly caramelize on the fish for a minute or two. Serve the grilled salmon immediately, offering additional Bourbon Peach BBQ Sauce on the side for dipping.
