- 1/2 teaspoon salt
- 4 tablespoons vegetable shortening, cut into 1/2-inch pieces and chilled
- 6 tablespoons unsalted butter, cut into 1/4-inch pieces and chilled
- 3-4 tablespoons ice water
Pie Filling
- 1 cup semisweet chocolate chips
- 1 stick unsalted butter (8 tablespoons), cut into 1 tablespoon sized pieces
- 3 tablespoons bourbon
- 3/4 cup granulated sugar
- 1/2 cup packed light brown sugar
- 2 tablespoons cornstarch
- 1/2 teaspoon salt
- 2 large eggs, plus 1 egg yolk, lightly beaten
- 1 teaspoon vanilla extract
- 1 1/2 cups walnuts, toasted and chopped
- Whipped cream for serving (bourbon whipped cream highly recommended!)

If the dough appears too dry to form a cohesive ball, add 1 more tablespoon of ice water. You can test for readiness by squeezing a small piece of dough in your hand; if it holds together, no more water is needed.

3. Chill the Dough: Gather the dough onto a piece of plastic wrap, flatten it into a disk shape, and wrap it completely. Refrigerate for at least 1 hour to allow the dough to chill and rest thoroughly.

Trim any excess dough so that it extends approximately 1/2-inch past the edge of the pie plate. Tuck this overhanging dough underneath itself and crimp the edges decoratively using your fingers or a fork.
